.%20It%20was%20years%20before%20I%20realized%20that%20a)%20they%20were%20a%20traditional%20Italian%20cookie%20that%20other%20Italian%20families%20besides%20ours%20knew%20about%20and%20b)%20they%20had%20a%20name:%20taralli%20(although%20there%20are%20umpteen%20variations%20on%20how%20to%20spell%20it).%3C/p%3E%3Cp%3EThey%20are%20very%20buttery,%20cakey%20cookies,%20simple%20to%20make%20and%20amazingly%20delicious%20in%20their%20simplicity.%20This%20is%20a%20recipe%20that%20lets%20the%20good,%20natural%20taste%20of%20butter%20really%20shine%20through%20(I%20have%20since%20seen%20other%20recipes%20for%20taralli%20that%20call%20for%20almond%20or%20lemon%20extract,%20but%20I%20prefer%20this%20simple%20buttery%20taste).%3C/p%3E%3Cp%3EThey%20don't%20have%20much%20sugar%20in%20them,%20so%20they%20are%20not%20very%20sweet.%20In%20fact,%20I%20prefer%20to%20eat%20them%20for%20breakfast,%20as%20they%20are%20almost%20more%20like%20a%20scone%20than%20a%20cookie.%20Similarly,%20they%20make%20a%20great%20cocktail%20cookie%20or%20afternoon%20tea%20cookie.%3C/p%3E%3Cp%3EHowever,%20if%20you%20have%20a%20sweeter%20sweet%20tooth%20than%20I,%20you%20can%20certainly%20ice%20them.%20Growing%20up,%20we%20always%20iced%20them,%20with%20a%20simple%20glaze%20made%20from%20confectioners%20sugar,%20moistened%20with%20a%20little%20lemon%20juice%20and%20milk%20--%20just%20enough%20to%20make%20a%20thick%20liquid%20to%20spoon%20over%20the%20cooled%20cookies.%20And,%20as%20they%20were%20Easter%20cookies,%20we%20added%20a%20drop%20or%20two%20food%20coloring%20to%20some%20of%20the%20glaze%20to%20make%20them%20pastel%20shades%20of%20pink,%20green%20and%20yellow,%20as%20well%20as%20white.%3C/p%3E%3Cp%3ESince%20I%20now%20eschew%20the%20icing%20and%20with%20a%20nod%20toward%20their%20being%20a%20traditional%20Easter%20cookie,%20I%20decided%20to%20be%20cute%20and%20turn%20the%20traditional%20twisty%20taralli%20shape%20into%20a%20bit%20of%20a%20bunny%20(at%20least%20I%20think%20they%20look%20like%20bunnies%20--%20Mr.%20Ninj%20was%20not%20entirely%20convinced).%20I%20really%20worked%20hard%20to%20perfect%20my%20bunny%20shape:%20with%20each%20batch%20that%20came%20out%20of%20the%20oven,%20I'd%20shout,%20%22BUNNY%20CONSULT!%22%20and%20Mr.%20Ninj%20would%20come%20judge%20which%20cookies%20looked%20the%20most%20like%20bunnies%20--%20then%20we'd%20discuss%20how%20we%20should%20tweak%20their%20ears%20or%20little%20dough%20cottontail%20butts%20to%20perfect%20the%20shape.%3C/p%3E%3Cp%3EBunny%20science,%20if%20you%20will.%3C/p%3E%3Cp%3EBut%20(ha%20ha%20ha)%20if%20you're%20not%20so%20into%20bunnies%20or%20want%20to%20make%20taralli%20for%20an%20occasion%20other%20than%20Easter,%20simply%20turn%20the%20dough%20into%20a%20braid%20or%20twist.%3C/p%3E%3Cp%3EBut%20(ha%20ha%20ha)%20come%20on,%20those%20bunnies%20are%20damned%20cute,%20aren't%20they?!!%3C/p%3E%3Cp%3EHappy%20Easter,%20peeps.%3C/p%3E%3Cp%3ETaralli%20(traditional%20buttery%20Italian%20cookies)%3C/p%3E%3Cp%3EMakes%20approximately%204%20dozen%20cookies%20and%20is%20easily%20halved%20or%20doubled%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20or%20the%20bowl%20of%20a%20stand%20mixer,%20beat%20together%20the%20eggs,%20sugar,%20vanilla,%20salt%20and%20melted%20butter.%20%20Sprinkle%20the%20baking%20powder%20over%20the%20surface,%20then%20add%20the%20flour%20and%20beat%20on%20lowish%20speed%20until%20combined.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20lightly%20floured%20work%20surface%20and%20knead%20until%20smooth%20and%20shiny%20(less%20than%20a%20minute).%20Pull%20off%20a%20ping-pong%20ball-sized%20portion%20of%20dough%20and%20roll%20it%20with%20your%20hands%20into%20a%20pencil-thin%20strip.%20Twist%20the%20strip%20into%20a%20knot%20or%20braid.%20To%20make%20the%20bunny%20shape%20shown,%20twist%20the%20dough%20and%20then%20shape%20the%20ends%20into%20floppy%20ears.%20Cut%20off%20another%20tiny%20piece%20of%20dough,%20roll%20it%20into%20a%20ball%20and%20place%20it%20on%20the%20bottom%20of%20the%20twist%20for%20the%20tail.%3C/p%3E%3Cp%3EBake%20in%20batches%20for%2010%20minutes%20on%20a%20parchment-lined%20baking%20sheet%20until%20cookies%20are%20just%20barely%20beginning%20to%20brown%20(check%20the%20bottoms).%20Cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20ice%20the%20cookies,%20make%20sure%20they%20are%20completely%20cool.%20To%20make%20the%20glaze,%20combine%202%20cups%20of%20confectioners%20sugar%20in%20a%20bowl%20with%20a%20squeeze%20of%20lemon%20juice%20and%20just%20enough%20milk%20to%20create%20a%20thick%20liquid.%20Spoon%20over%20the%20cookies%20and%20let%20harden.%3C/p%3E){kind=link}
