- In tilt skillet on high heat sear and color chicken breasts, skin side down in small amount of oil.
- Flip chicken and add onion, garlic, thyme, pepper, salt, and vinegar.
- Lower heat and close lid; braise chicken for 15 minutes.
- Open lid to allow liquid to cook off, creating thickened glaze.
- Check internal temperature and adjust seasoning.
- Pan up in steamtable pans. Garnish with tarragon and parsley. Serve.
