Ingredientes

  • 50 each chicken breast- bone in with skin
  • 1 cup oil
  • 1 bad diced onions
  • 1/4 cup thyme
  • 1/4 cup white pepper
  • 1/4 cup salt
  • 1 gal tarragon vinegar
  • 1/2 cup minced fresh parsley
  • 1/4 cup garlic
  • 1/4 cup LS chicken base
  • 1/4 cup chicken base
  • 2 gals water
  • 3 bunch tarragon- fresh, chopped

Direcciones

  1. In tilt skillet on high heat sear and color chicken breasts, skin side down in small amount of oil.
  2. Flip chicken and add onion, garlic, thyme, pepper, salt, and vinegar.
  3. Lower heat and close lid; braise chicken for 15 minutes.
  4. Open lid to allow liquid to cook off, creating thickened glaze.
  5. Check internal temperature and adjust seasoning.
  6. Pan up in steamtable pans. Garnish with tarragon and parsley. Serve.
