Ingredientes
- 50 each chicken breast- bone in with skin
- 1 cup oil
- 1 bad diced onions
- 1/4 cup thyme
- 1/4 cup white pepper
- 1/4 cup salt
- 1 gal tarragon vinegar
- 1/2 cup minced fresh parsley
- 1/4 cup garlic
- 1/4 cup LS chicken base
- 1/4 cup chicken base
- 2 gals water
- 3 bunch tarragon- fresh, chopped
Direcciones
- In tilt skillet on high heat sear and color chicken breasts, skin side down in small amount of oil.
- Flip chicken and add onion, garlic, thyme, pepper, salt, and vinegar.
- Lower heat and close lid; braise chicken for 15 minutes.
- Open lid to allow liquid to cook off, creating thickened glaze.
- Check internal temperature and adjust seasoning.
- Pan up in steamtable pans. Garnish with tarragon and parsley. Serve.
