%20I%20used%20to%20get%20a%20little%20nervous%20at%20the%20thought%20of%20making%20a%20cake%20for%20a%20special%20occasion,%20but%20I%20am%20now%20so%20used%20to%20the%20task%20that%20I%20am%20using%20it%20as%20an%20opportunity%20to%20hone%20my%20baking%20and%20cake%20decorating%20skills.%3C/p%3E%3Cp%3EThis%20is%20one%20good%20example%20of%20my%20recent%20cake-making%20experiment.%20This%20'made-to-order'%20birthday%20cake%20was%20created%20based%20on%20just%20one%20piece%20of%20information%20I%20gathered,%20%22lots%20of%20fruits,%20no%20cheese%20please%22.%3C/p%3E%3Cp%3EI%20was%20in%20no%20mood%20to%20baked%20a%20sponge%20layered%20cake%20so%20I%20settled%20for%20a%20no-bake%20chilled%20cake.%20Instead%20of%20digestive%20biscuits,%20the%20cake%20base%20is%20made%20with%20crushed%20oreo%20cookies,%20to%20make%20the%20oreo-cookie%20monsters%20in%20my%20house%20happy.%20I%20removed%20the%20cream%20in%20the%20oreos...and%20it%20became%20an%20instant%20treat%20for%20my%20child...he%20gathered%20the%20cream%20and%20rolled%20it%20between%20his%20hands%20to%20form%20'candy%20balls'!%20It%20was%20really%20an%20unpleasant%20sight!!%3C/p%3E%3Cp%3EI%20have%20decided%20on%20a%20mango%20mousse%20filling%20since%20I%20have%20been%20buying%20mangoes%20in%20'bulk'.%20However,%20I%20wanted%20to%20do%20away%20with%20the%20whipping%20cream%20or%20heavy%20cream%20that%20is%20called%20for%20in%20every%20single%20recipe%20that%20I%20looked%20up%20in%20the%20internet.%20I%20had%20no%20luck%20with%20whatever%20cookbooks%20I%20have%20on%20hand%20too.%20Since%20I%20was%20quite%20determined%20to%20make%20the%20mousse%20filling%20without%20any%20heavy%20cream%20or%20whipped%20cream,%20I%20went%20ahead%20to%20create%20my%20own%20recipe.%3C/p%3E%3Cp%3EI%20blended%20fresh%20mangoes,%20passion%20fruits%20and%20some%20non-fat%20yogurt,%20the%20blender%20I%20borrowed%20from%20one%20of%20my%20siblings%20came%20in%20handy%20:)%20To%20help%20the%20mixture%20set,%20I%20added%20some%20gelatin%20powder%20(melted%20in%20water).%20Even%20though%20I%20used%20a%207%22%20pan,%20the%20mousse,%20or%20rather%20pudding-like%20filling%20was%20too%20little.%20The%20filling%20layer%20%20came%20up%20to%20only%201.5%22,%20as%20a%20result,%20I%20had%20a%20very%20short%20cake%20:(%3C/p%3E%3Cp%3EDecorating%20the%20cake%20was%20easy,%20I%20simply%20loaded%20it%20with%20chunks%20of%20fresh%20fruits...mangoes,%20strawberries%20and%20blueberries.%20Little%20did%20I%20know%20the%20mousse%20layer%20was%20not%20really%20firm%20enough%20to%20take%20the%20weight%20of%20the%20fruits,%20and%20the%20cake%20started%20to%20'sink'!%20I%20guess%20if%20I%20were%20to%20add%20the%20whipping%20cream,%20the%20texture%20would%20be%20firmer?%20So%20after%20I%20was%20done%20with%20the%20decoration,%20I%20had%20to%20wrap%20the%20sides%20of%20the%20finished%20cake%20with%20a%20plastic%20strip%20(cut%20out%20from%20a%20cookie%20bag)%20in%20order%20to%20hold%20the%20mousse%20layer%20together.%20I%20left%20it%20to%20chill%20in%20the%20fridge%20again%20hoping%20it%20would%20firm%20up.%3C/p%3E%3Cp%3EDespite%20the%20flaws%20and%20a%20rather%20odd%20combination%20of%20flavours%20(oreo%20with%20fruits?!),%20the%20cake%20tasted%20very%20refreshing,%20full%20of%20fruity%20flavours...sweet,%20juicy,%20and%20a%20slight%20tang%20from%20the%20passion%20fruit.%20The%20filling%20tasted%20just%20like%20pudding.%20With%20everyone%20asking%20for%20second%20helpings,%20our%20family%20of%20four%20wolfed%20down%20the%20entire%20cake%20in%20one%20setting.%20It%20was%20the%20first%20time%20we%20didn't%20have%20to%20have%20leftover%20birthday%20cakes%20for%20breakfast%20the%20next%20day%20;)%3C/p%3E%3Cp%3ENote*:%20I%20have%20posted%20the%20recipe%20here%20for%20my%20own%20reference.%20In%20case%20you%20are%20interested%20to%20try%20this,%20do%20note%20that%20the%20ingredient%20amount%20for%20the%20filling%20needs%20further%20fine-tuning,%20unless%20you%20don't%20mind%20a%20short%20cake.%3C/p%3E%3Cp%3EMango%20Yogurt%20Pudding%20Cake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%20one%207%22%20cake)%3C/p%3E%3Cp%3Efor%20the%20biscuit%20base:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3Eto%20make%20the%20biscuit%20base:%3C/p%3E%3Cp%3EPlace%20oreo%20crumbs%20and%20melted%20butter%20in%20a%20bowl.%20Mix%20thoroughly%20with%20a%20spoon%20until%20the%20crumbs%20are%20moistened.%20Press%20the%20crumbs%20evenly%20into%20the%20base%20of%20a%207%22%20round%20pan%20(with%20removable%20base).%20Use%20the%20back%20of%20the%20spoon,%20smooth%20out%20the%20crumbs%20and%20press%20firmly.%20You%20can%20also%20use%20a%20glass%20(with%20a%20flat%20base)%20to%20press%20down%20firmly.%20Freeze%20the%20base%20for%20at%20least%201%20hour.%3C/p%3E%3Cp%3Eto%20make%20the%20filling:%3C/p%3E%3Cp%3EMeasure%20water%20into%20a%20bowl%20and%20sprinkle%20in%20the%20gelatin%20(without%20stirring).%20Set%20aside%20to%20allow%20the%20gelatin%20grains%20to%20swell%20(10%20mins)%20before%20setting%20the%20bowl%20over%20a%20pot%20of%20simmering%20hot%20water.%20Stir%20with%20a%20spoon%20and%20once%20the%20gelatin%20melts,%20remove%20the%20bowl%20from%20the%20pot%20and%20set%20aside%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EBlend%20mangoes,%20passion%20fruit%20juice,%20sugar,%20yogurt%20until%20the%20mixture%20becomes%20smooth.%20Add%20in%20the%20gelatin%20solution%20to%20the%20mixture,%20mix%20well.%20Pour%20mixture%20onto%20the%20biscuit%20base.%20Cover%20with%20cling%20wrap%20and%20leave%20to%20chill%20in%20the%20fridge%20over%20night%20or%20for%20at%20least%204-6%20hours.%20Remove%20cake%20from%20fridge,%20unmold%20and%20decorate%20with%20fruits%20as%20desired.%20Keep%20the%20cake%20in%20the%20fridge%20before%20serving.%3C/p%3E){kind=link}
