Ingredientes

  • 1 lb Turkey -- grnd/cooked
  • 1 x 10 ounce can
  •     Cooked/mashed
  • 1 tsp Garlic pwdr
  • 1/2 tsp Cumin
  • 1/2 tsp Oregano
  • 1/4 tsp Black pepper
  • 1 c. Onion -- minced
  • 1 1/2 c. Squash -- diced
  • 1 1/2 c. Zucchini -- diced
  • 1/2 c. Red pepper
  • 2 1/4 ounce Cheddar cheese -- shredded
  • 2 1/4 ounce Mozzarella cheese --
  •     Shredded
  • 4 x Egg whites
  • 3 Tbsp. Bread crumbs
  •     Pinto beans --

Direcciones

  1. Preheat oven at 350. Prepare a 13 x 9" pan with cooking spray. In a mixing bowl, combine turkey, beans, garlic pwdr, cumin, oregano, and pepper. Coarsely mash beans with pastry blender; transfer to prepared pan.
  2. Prepare skillet with oil; add in onion. Cook over medium-high heat 2 min.
  3. Add in squash, zucchini, and red pepper; cook 3 min longer. Spread vegetable mix over turkey mix. In a small bowl, whisk together cheeses and egg whites; pour over casserole. Sprinkle with bread crumbs.
  4. Bake for 30 min, or possibly till golden.
