Ingredientes

  • 3/4 c. Onion minced
  • 2 Tbsp. Extra virgin olive oil
  • 1 c. Rice raw
  • 1/4 tsp Black Pepper
  • 2 x Garlic Cloves
  • 2 1/2 c. Vegetable Broth
  • 1 1/2 tsp Grnd Cumin
  • 1 x Red Bell Pepper

Direcciones

  1. Mince garlic. Remove seeds and dice bell pepper.
  2. In dutch oven, cook onion, garlic and raw rice in oil till onion is tender and rice is lightly browned.
  3. Add in chicken broth and bring to a boil. Stir in cumin and black pepper.
  4. Cover tightly and simmer 20 min. Remove from heat. Stir in bell pepper. Let stand covered till all liquid is absorbed, about 5 min.
