%20with%20soy%20sauce%20(see%20ew)%22.%20This%20is%20a%20very%20popular%20dish%20in%20Thai%20restaurants,%20both%20here%20and%20abroad.%20It%20is%20made%20with%20flat%20rice%20noodles,%20veggies,%20egg,%20and%20meat%20of%20your%20choice.%20It%20is%20by%20far%20my%20favorite%20Thai%20dish.%20There%20could%20be%20differences%20in%20the%20way%20it%20is%20made,%20though.%20The%20version%20I%20am%20sharing%20here%20are%20the%20step%20by%20step%20pictures%20and%20recipe%20as%20cooked%20in%20the%20kitchen%20of%20Paa%20Oot,%20a%20very%20gracious%20Thai%20lady%20who%20runs%20a%20popular%20restaurant%20here.%20One%20difference%20I%20find%20in%20her%20recipes%20(compared%20to%20others)%20is%20that%20she%20adds%20a%20lot%20of%20veggies%20(good%20thing,%20right?)%3C/p%3E%3Cp%3EIdeally,%20to%20get%20this%20recipe%20right%20in%20your%20home,%20just%20remember%20these:%3C/p%3E%3Cp%3EIt%20is%20very%20important%20to%20get%20everything%20prepped%20and%20ready%20before%20you%20start%20cooking-don't%20go%20chopping%20the%20veggies%20while%20the%20garlic%20is%20frying!%20Trust%20the%20French%20to%20come%20up%20with%20a%20name%20for%20this-mis%20en%20place%20:-)%3C/p%3E%3Cp%3EIt's%20nice%20to%20do%20this%20in%20a%20big%20wok%20which%20you%20can%20cook%20on%20medium-to-high%20heat.%3C/p%3E%3Cp%3EFlat,%20broad%20rice%20noodles%20are%20available%20either%20fresh%20or%20dry.%20Obviously,%20using%20the%20fresh%20ones%20are%20easier,%20but%20if%20only%20dry%20noodles%20are%20available,%20cook%20according%20to%20instructions%20on%20the%20pack%20and%20follow%20the%20recipe.%3C/p%3E%3Cp%3EDark/black%20sweet%20soy%20sauce%20is%20used%20for%20coating%20the%20noodle.%20This%20is%20more%20viscous%20and%20made%20from%20palm%20sugar%20molasses.%20Do%20not%20use%20light%20soy%20sauce%20for%20coating%20it!%3C/p%3E%3Cp%3EChinese%20kale%20or%20Chinese%20broccoli%20(Kai-lan)%20is%20what%20is%20usually%20used.%20I%20have%20seen%20recipes%20where%20broccoli%20florets%20have%20been%20substituted%20for%20this.%3C/p%3E%3Cp%3EIt%20is%20always%20better%20to%20make%20smaller%20portions%20of%20this,%20maybe%20for%20two%20people%20at%20a%20time,%20and%20repeat%20if%20you%20have%20more%20people%20to%20feed...this%20is%20because%20these%20noodles%20are%20quite%20complicated%20at%20first%20to%20get%20right%20in%20large%20quantities!%3C/p%3E%3Cp%3EHere%20we%20go....%3C/p%3E%3Cp%3ETo%20serve%20one%20person:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPrep:%3C/p%3E%3Cp%3EChop%20up%20the%20garlic.%3C/p%3E%3Cp%3EFor%20the%20Chinese%20kale:%20First%20separate%20stalk%20from%20leaves.%20Peel%20off%20the%20skin%20of%20the%20stem%20using%20a%20peeler.%20Then%20cut%20the%20stalks%20into%20diagonal%20strips.%20Chop%20the%20leaves%20roughly%20into%20large%20pieces%20(they%20will%20wilt%20away,%20don't%20worry!).%3C/p%3E%3Cp%3EFor%20the%20carrot,%20cut%20into%20diagonal%20strips.%20For%20the%20cabbage,%20chop%20up%20roughly%20into%20large%20pieces.%20Leave%20the%20snow%20peas%20whole.%20Put%20the%20kale,%20carrot,%20cabbage,%20and%20snow%20peas%20in%20a%20bowl%20and%20sprinkle%20sugar%20on%20top%20(presumably%20it%20keeps%20them%20crisp).%3C/p%3E%3Cp%3EBreak%20the%20egg%20into%20a%20bowl.%20Do%20not%20beat.%3C/p%3E%3Cp%3ECut%20the%20chicken%20into%20strips.%3C/p%3E%3Cp%3ESpread%20the%20flat%20noodles%20on%20a%20plate.%20Its%20okay%20if%20some%20are%20clumped%20together.%20Mix%20the%20dark%20soy%20sauce%20on%20them%20nicely%20with%20your%20hands.%3C/p%3E%3Cp%3EEverything%20'mis%20en%20place'!%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20Heat%20up%20your%20wok%20and%20pour%20in%20the%20oil.%3C/p%3E%3Cp%3E2.%20When%20it%20is%20hot,%20put%20in%20the%20garlic%20and%20let%20it%20sizzle.%3C/p%3E%3Cp%3E3.%20Put%20in%201%20tablespoon%20of%20pepper.%3C/p%3E%3Cp%3E4.%20Add%20the%20chicken%20strips%20and%20fry%20for%205%20minutes.%20Then%20put%20in%20the%20fermented%20soy%20bean%20paste.%3C/p%3E%3Cp%3E5.%20Move%20the%20chicken%20to%20the%20sides%20and%20pour%20in%20the%20egg.%20Scramble%20it%20up%20a%20bit.%3C/p%3E%3Cp%3E6.%20Now%20add%20in%20the%20noodles.%3C/p%3E%3Cp%3E7.%20Pour%20the%20oyster%20sauce%20and%20cooking%20sauce.%3C/p%3E%3Cp%3E9.%20Now%20add%20all%20the%20veggies.%3C/p%3E%3Cp%3EKeep%20stirring%20for%205%20or%20more%20minutes,%20on%20high%20heat,%20till%20the%20leaves%20are%20wilted%20and%20the%20veggies%20and%20meat%20are%20cooked%20to%20your%20liking%20(the%20snow%20peas%20must%20still%20be%20crisp!).%20Do%20not%20add%20any%20water%20at%20any%20stage.%20It%20is%20more%20delicious%20if%20you%20actually%20burn%20it%20a%20bit,%20turning%20the%20egg%20brown%20and%20crispy.%20If%20you%20have%20to%20scrape%20it%20off%20the%20pan,%20you%20know%20you've%20done%20a%20good%20job!%3C/p%3E%3Cp%3ETransfer%20to%20a%20plate%20and%20serve%20and%20eat%20hot!%3C/p%3E%3Cp%3EFor%20Thai%20stir%20fried%20vegetables%20with%20prawns,%20see%20Pad%20Pak%20Luam.%3C/p%3E%3Cp%3EDo%20let%20me%20know%20if%20you%20tried%20and%20liked%20this%20and%20any%20other%20suggestions%20for%20other%20recipes%20you%20wou
