%20So%20good!%20Of%20course%20my%20favorite%20Thai%20dining%20experience%20of%20all%20time%20was%20at%20Nan%20in%20Atlanta,%20GA.%20If%20you%20find%20yourself%20in%20the%20ATL%20with%20a%20hankerin'%20for%20Thai%20food,%20you've%20gotta%20check%20them%20out.%20It's%20a%20gorgeous%20restaurant%20with%20amazing%20food.%20My%20Thai%20recipes%20are%20probably%20almost%20as%20good%20rather%20than%20just%20as%20good%20for%20a%20number%20of%20reasons.%20For%20one,%20I'm%20originally%20from%20small%20town%20Indiana.%20I%20didn't%20grow%20up%20eating%20Thai%20food.%20Throwing%20these%20ingredients%20together%20is%20not%20intuitive%20for%20me,%20I%20have%20to%20concentrate%20on%20the%20recipes.%20It's%20not%20like%20the%20food%20I%20grew%20up%20cooking%20where%20I%20just%20%22feel%20it%22,%20adjusting%20to%20taste%20and%20texture%20because%20I%20know%20how%20the%20food%20is%20supposed%20to%20look%20and%20taste%20at%20any%20given%20stage%20in%20the%20preparation%20of%20the%20recipe.%20When%20I'm%20cooking%20%22my%20food%22%20I'm%20more%20likely%20to%20play%20with%20seasoning%20to%20get%20it%20right.%20When%20making%20something%20that%20I'm%20not%20as%20familiar%20with,%20I%20stick%20a%20little%20more%20closely%20to%20the%20recipe.%20Second,%20the%20Thai%20recipes%20that%20I%20have%20made%20at%20home%20are%20made%20from%20ingredients%20that%20I%20picked%20up%20at%20the%20grocery%20store.%20Often%20there%20is%20only%20one%20option%20for%20each%20product.%20It's%20not%20like%20I%20can%20pick%20and%20choose%20between%20brands.%20Not%20that%20I%20know%20which%20would%20be%20best%20even%20if%20I%20did%20have%20an%20option.%20I'd%20love%20to%20spend%20a%20day%20in%20the%20kitchen%20of%20my%20local%20Thai%20restaurant%20and%20observe%20their%20ingredients%20and%20methods.%20Along%20the%20lines%20of%20talking%20about%20ingredients,%20most%20of%20the%20recipes%20I%20have%20tried%20are%20lightened%20up%20versions,%20adaptations%20of%20my%20Thai%20favorites%20made%20healthier.%20The%20original,%20full%20fat%20and%20calorie%20recipes%20might%20resemble%20those%20ordered%20off%20the%20menu%20a%20little%20more%20closely.%20All%20of%20that%20said,%20I%20wasn't%20disappointed%20in%20this%20Thai%20noodle%20recipe.%20It%20was%20delicious!%20The%20flavors%20were%20wonderful%20together%20and%20just%20what%20I%20had%20hoped%20for.%3C/p%3E%3Cp%3EHere's%20whatcha%20need:%20fresh%20lime%20juice,%20boneless,%20skinless%20chicken%20breast,%20rice%20noodles,%20brown%20sugar,%20fish%20sauce%20(%20I%20only%20had%20oyster%20sauce),%20soy%20sauce,%20chili%20paste%20with%20garlic,%20salt,%20green%20onions,%20ginger,%20garlic,%20fresh%20basil,%20lemon%20grass,%20and%20shallots.%3C/p%3E%3Cp%3EYes,%20that's%20our%20grill%20in%20the%20background%20of%20the%20ingredient%20picture.%20He's%20not%20gettin'%20a%20lot%20of%20action%20these%20days.%20:%20(%3C/p%3E%3Cp%3ETo%20begin%20with,%20you%20cut%20the%20chicken%20into%20cubes%20and%20combine%20with%202%20tablespoons%20of%20lime%20juice%20for%2015%20minutes.%3C/p%3E%3Cp%3ESoak%20the%20noodles%20in%20hot%20water.%20Ideally,%20you%20would%20have%20the%20XL%20or%20wide%20rice%20noodles%20for%20this%20recipe.%20My%20local%20grocery%20store%20only%20carried%20the%20regular%20size%20version.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20marinates%20and%20the%20noodles%20soak,%20combine%20the%20remaining%20lime%20juice,%20brown%20sugar,%20fish%20sauce,%20soy%20sauce,%20chili%20paste,%20and%20salt%20with%20water%20to%20make%20the%20sauce.%3C/p%3E%3Cp%3EHeat%20some%20oil%20in%20a%20skillet%20and%20add%20the%20chicken%20to%20the%20pan.%20Stir%20fry%20for%204%20minutes%20until%20done.%20I%20also%20gave%20the%20chicken%20a%20nice%20sprinkle%20of%20salt%20to%20season%20it%20up.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20to%20a%20bowl%20and%20keep%20it%20warm.%20Add%20a%20little%20more%20oil%20to%20the%20skillet%20and%20toss%20in%20the%20green%20onions,%20ginger,%20and%20garlic.%20Stir%20fry%20until%20golden%20and%20fragrant.%20I%20also%20added%20in%20some%20of%20the%20shallots%20to%20the%20mix.%3C/p%3E%3Cp%3ENow%20toss%20in%20the%20drained%20noodles%20and%20stir%20fry%20for%2030%20seconds,%20tossing%20well.%3C/p%3E%3Cp%3EStir%20in%20the%20sauce.%3C/p%3E%3Cp%3ETo%20wrap%20it%20up,%20return%20the%20chicken%20to%20the%20noodles%20and%20cook%20another%2030%20seconds.%20Top%20with%20basil,%20lemon%20grass,%20and%20shallots.%20I%20only%20had%20lemongrass%20paste,%20so%20I%20stirred%20that%20into%20the%20noodles%20and%20tossed%20well%20to%20combine.%20It%20was%20lovely.%20The%20biggest%20surprise%20for%20me%20was%20that%20my%20husband%20really%20enjoyed%20this%20dish.%20He%20even%20took%20the%20leftovers%20to%20work%20for%20lunch%20and%20returned%20an%20empty%20container%20that%20evening.%20It%20had%20to%20be%20good!%3C/p%3E%3Cp%3EThai%20Rice%20Noodles%20with%20Chicken%20from%20Cooking%20Light%20October%202009%3C/p%3E%3Cp%3EYield:%204%20servings%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3E1.%20Combine%202%20tablespoo
