.%20%20As%20such,%20my%20income%20comes%20from%20teaching%20an%20array%20of%20classes,%20some%20language%20classes,%20some%20literature%20classes.%3C/p%3E%3Cp%3EThis%20past%20semester%20I%20was%20the%20head%20teaching%20assistant%20for%20a%20very%20large%20class%20about%20Childhood%20Literature.%20%20My%20responsibilities%20in%20this%20role%20involved%20wrangling%20the%20other%20five%20teaching%20assistants,%20making%20sure%20the%20professor%20leading%20the%20course%20had%20everything%20she%20needed%20(and%20that%20we%20needed!),%20teaching%20a%20couple%20discussion%20sections,%20and%20doing%20general%20admin%20work.%20%20In%20short,%20this%20job%20came%20with%20major%20potential%20for%20ass-pain%20and%20irritation.%20%20Going%20into%20the%20semester%20I%20had%20no%20idea%20what%20to%20expect.%20%20Luckily,%20I%20managed%20to%20keep%20it%20together%20and%20keep%20our%20almost-200%20students%20relatively%20happy%20(You'll%20be%20hearing%20more%20soon%20about%20how%20my%20fellow%20teachers%20and%20I%20threw%20a%20party%20for%20all%20of%20our%20students!),%20keep%20the%20other%20teachers%20mostly%20prepared%20and%20satisfied,%20and%20keep%20any%20major%20deadlines%20from%20slipping%20past%20us%20unnoticed%20(the%20ones%20that%20flew%20by%20were%20noticed,%20if%20not%20adhered%20to).%3C/p%3E%3Cp%3EAs%20much%20as%20I'd%20like%20to%20take%20all%20the%20credit,%20that%20would%20be%20dishonest%20at%20best%20and%20cruel%20at%20worst.%20%20This%20post,%20you%20see,%20and%20the%20contents%20of%20it%20are%20meant%20as%20a%20tribute%20to%20the%20lovely%20teachers%20who%20made%20my%20semester%20so%20much%20nicer%20and%20more%20pleasant%20than%20it%20could%20have%20been%20with%20less%20willing%20and%20able%20help.%3C/p%3E%3Cp%3ETo%20thank%20these%20lovely%20ladies%20and%20one%20gentleman%20I%20invited%20them%20over%20for%20dinner%20a%20couple%20weeks%20ago.%20%20Despite%20my%20purely%20last-minute%20preparation%20and%20pronounced%20indecisiveness%20about%20the%20menu,%20I%20pulled%20together%20a%20meal%20that%20I%20think%20was%20worthy%20of%20their%20good%20humor%20and%20help%20and%20we%20all%20passed%20a%20lovely%20evening%20together.%3C/p%3E%3Cp%3EThe%20Menu:%3C/p%3E%3Cp%3ESimple%20Green%20Salad%20dressed%20with%20grated%20romano,%20olive%20oil,%20and%20good%20balsamic%3C/p%3E%3Cp%3EBrie-stuffed,%20prociutto-wrapped%20chicken%20breasts%3C/p%3E%3Cp%3Eserved%20with%20Asparagus%20Hash%3C/p%3E%3Cp%3ETwo%20desserts:%3C/p%3E%3Cp%3EFresh%20strawberry%20shortcakes%20made%20with%20homemade%20buttermilk%20biscuits%20(pictured%20below)%3C/p%3E%3Cp%3EChocolate%20Custard%20Pie%3C/p%3E%3Cp%3EIt%20all%20turned%20out%20to%20be%20quite%20delicious%20(I%20will%20permit%20myself%20to%20brag%20about%20dinner)%20and%20the%20evening%20was%20filled%20with%20good%20gossip,%20hearty%20laughs,%20and%20a%20rather%20good%20time,%20I%20thought.%3C/p%3E%3Cp%3EThe%20most%20interesting%20part%20of%20the%20dinner%20prep%20was%20the%20pie.%20%20It%20was%20a%20new%20recipe%20for%20me%20and%20that%20always%20gives%20me%20butterflies.%20%20Moreover,%20I%20picked%20the%20recipe%20at%20the%20very%20last%20possible%20second,%20which%20left%20no%20margin%20for%20error.%20%20Luckily,%20a%20few%20messy%20mistakes%20aside%20(I%20accidentally%20jiggled%20about%20a%20third%20of%20the%20filling%20out%20of%20the%20crust%20and%20into%20the%20bottom%20of%20my%20oven,%20causing%20a%20major%20cloud%20of%20chocolate%20scented%20smoke%20and%20a%20greasy%20black%20spot%20that%20I%20haven't%20yet%20dealt%20with),%20the%20pie%20emerged,%20gloriously%20caramelized,%20perfectly%20browned,%20and%20oh-so-custardy%20and%20all%20were%20satisfied.%20%20The%20charming%20thing%20about%20this%20pie%20is%20that%20it%20separates%20into%20three%20beautiful%20layers%20while%20it%20bakes%20-%20a%20crispy%20caramelized%20chocolatey%20crust,%20a%20caramelly%20custard,%20and%20a%20flaky,%20tender%20crust.%20%20It%20looks%20like%20WAY%20more%20work%20than%20it%20is%20in%20reality.%20%20With%20no%20further%20ado,%20I%20give%20you%20the%20recipe.%20%20Make%20this%20for%20someone%20you%20love%20(or%20appreciate,%20or%20owe%20a%20semester's%20worth%20of%20work%20to).%20%20I%20think%20it%20would%20be%20delicious%20with%20some%20sort%20of%20berry%20sauce.%20%20Or%20alone.%20%20For%20breakfast.%3C/p%3E%3Cp%3EChocolate%20Custard%20Pie%3C/p%3E%3Cp%3Eadapted%20from%20cooks.com%3C/p%3E%3Cp%3EMake%20crust:%20I%20used%20a%20very%20basic%203-2-1%20pie%20crust.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%3C/p%3E%3Cp%3EPulse%20the%20flour%20and%20salt%20together%20in%20a%20food%20processor,%20then%20add%20the%20butter,%201/2%20T%20at%20a%20time.%20%20Pulse%20until%20the%20mixture%20resembles%20meal.%3C/p%3E%3Cp%3EAdd%20water,%201%20T%20at%20a%20time%20until%20the%20dough%20comes%20together%20into%20a%20rough%20mass.%3C/p%3E%3Cp%3EIf%20you%20have%20a%20two-piece%20fluted%20tart%20pan,%20that%20will%20make%20things%20very%20easy%20-%20simply%20press%20the%20dough%20into%20the%20pan%20until%20it's%20roughly%20even,%
