Penny - Your apple pie recipe is, without question, one of the best desserts I've come across in 50 years. I love the science and thinking that goes into your work - that is what moves a person from cook to chef. You found the 'why' and transformed it into a perfectly balanced, perfectly composed, totally complete dish. "As American as apple pie" has taken on a whole new meaning for me since trying your recipe. We've all had bad, mediocre and good apple pies in our lives. Yours is simply splendid.
