%20but%20I%20admit%20I'm%20a%20lot%20better%20at%20curing%20a%20slab%20of%20bacon%20than%20baking%20a%20loaf%20of%20bread.%3C/p%3E%3Cp%3EThat%20goes%20for%20pies,%20too.%20%20Not%20the%20fillings,%20mind%20you%20-%20my%20pie%20fillings%20are%20awesome%20-%20but%20my%20crusts%20have%20always%20been%20less%20than%20spectacular.%20%20Some%20years%20ago,%20I%20finally%20just%20gave%20up%20trying%20and%20started%20buying%20Pillsbury%20refrigerated%20pie%20crust,%20which%20is%20pretty%20much%20just%20flour,%20lard,%20and%20a%20bit%20of%20salt,%20just%20like%20most%20homemade%20crusts.%20But%20lately%20money's%20been%20pretty%20tight%20and%20pre-cut%20pre-rolled%20circles%20of%20pie%20crust%20from%20the%20refrigerator%20case%20is%20more%20expensive%20and%20less%20versatile%20than%20homemade.%20%20So%20the%20search%20was%20on%20for%20a%20pie%20crust%20recipe%20that%20even%20a%20baking%20doofus%20like%20me%20could%20knock%20together%20reliably.%3C/p%3E%3Cp%3EIt%20took%20a%20while,%20but%20I%20finally%20found%20a%20pie%20crust%20recipe%20that%20comes%20out%20beautifully%20-%20flaky%20and%20tender%20and,%20um...easy%20as%20pie%20to%20make.%20%20It%20was%20on%20a%20handwritten%20scrap%20of%20memo%20paper%20tucked%20in%20one%20of%20my%20old%20estate-sale%20cookbook%20discoveries,%20and%20versions%20of%20it%20are%20common%20all%20over%20the%20internet.%20%20I%20present%20it%20to%20you%20here:%3C/p%3E%3Cp%3ENever%20Fail%20Pie%20Crust%3C/p%3E%3Cp%3EMakes%20pastry%20for%20two%202-crust%20pies%3C/p%3E%3Cp%3ECombine%20the%20salt,%20sugar%20and%20flour%20in%20a%20large%20bowl.%20%20Cut%20in%20the%20lard%20with%20a%20pastry%20blender%20until%20the%20mixture%20is%20coarse%20and%20crumbly.%3C/p%3E%3Cp%3EBeat%20the%20egg%20with%20icewater%20and%20vinegar,%20then%20stir%20it%20into%20the%20flour%20mixture%20with%20a%20fork%20until%20moistened.%20%20Knead%20it%20a%20little%20to%20make%20a%20smooth,%20silky%20dough.%20%20Divide%20the%20dough%20into%20four%20equal%20portions,%20wrap%20each%20ball%20in%20plastic,%20and%20refrigerate%20it%20for%20at%20least%2015%20minutes%20before%20rolling%20it%20out.%3C/p%3E%3Cp%3EYou%20can%20use%20shortening%20instead%20of%20lard%20if%20you%20like,%20but%20I've%20found%20that%20lard%20really%20does%20make%20the%20best%20pie%20crust%20and%20because%20I%20don't%20make%20a%20steady%20diet%20of%20the%20stuff%20I'm%20not%20too%20worried%20about%20indulging%20occasionally.%3C/p%3E%3Cp%3EYou%20wouldn't%20believe%20how%20easy%20this%20dough%20is%20to%20work%20with.%20%20I%20rolled%20it%20out%20directly%20on%20my%20lovely%20old%20formica%20tabletop%20without%20pastry%20cloth%20or%20wax%20paper,%20just%20a%20dusting%20of%20flour%20to%20keep%20it%20from%20sticking,%20and%20it%20was%20simple%20to%20roll%20and%20easy%20to%20pick%20up%20off%20the%20table%20top%20no%20matter%20how%20thin%20I%20rolled%20it.%20%20Truly%20awesome.%3C/p%3E%3Cp%3ELast%20night%20I%20made%20up%20a%20batch%20of%20the%20pie%20crust%20to%20help%20me%20use%20up%20some%20leftover%20chicken%20and%20gravy.%20%20I%20lined%20a%20bunch%20of%20little%20Pyrex%20custard%20cups%20with%20the%20pastry,%20filled%20each%20of%20them%20with%20cubed%20chicken,%20some%20precooked%20diced%20potatoes%20and%20carrots,%20some%20frozen%20peas,%20a%20bit%20of%20minced%20onion,%20and%20a%20big%20dollop%20of%20chicken%20gravy.%20%20Then%20I%20fitted%20them%20with%20top%20crusts%20and%20popped%20them%20into%20a%20375F%20oven%20for%20a%20little%20less%20than%20an%20hour.%3C/p%3E%3Cp%3EThey%20turned%20out%20great.%20%20Seriously%20great.%20%20I%20am%20so%20glad%20I%20found%20that%20pie%20crust%20recipe.%3C/p%3E){kind=link}
