The Highgate Cafe Chocolate Zucchini Cake

The best, most moist, yummy chocolate cake we make for all our birthdays. And what a good use for that giant zucchini you grew. Just grate it and freeze until an occasion comes along to make this!

Ingredientes

  • 2 1/2 C flour
  • 2 1/2 heaping tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 c cocoa slightly rounded
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 C oil
  • 2 C sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 C sour cream
  • 2 C grated zucchini
  • 1 bag semi-sweet chocolate chips

Direcciones

  1. Combine and blend flour, baking powder, baking soda, cocoa, salt and cinnamon.
  2. In another bowl, combine oil and sugar; add one egg at a time and beat well after each.
  3. Combine both mixtures.
  4. Add vanilla, sour cream, and grated zucchini blending until well mixed.
  5. Add chocolate chips.
  6. Pour into generously greased bundt pan.
  7. Place on middle rack of oven and bake at 350 F for 50-60 minutes (40 min. for convection) until a wooden skewer comes out clean & dry.
  8. Allow cake to cook thoroughly on a rack before removing from pan.
  9. Ice with chocolate buttercream icing of your choice.
