Receta The Highgate Cafe Chocolate Zucchini Cake
The best, most moist, yummy chocolate cake we make for all our birthdays. And what a good use for that giant zucchini you grew. Just grate it and freeze until an occasion comes along to make this!

Ingredientes
- 2 1/2 C flour
- 2 1/2 heaping tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 c cocoa slightly rounded
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3/4 C oil
- 2 C sugar
- 3 eggs
- 1 tsp vanilla
- 1/2 C sour cream
- 2 C grated zucchini
- 1 bag semi-sweet chocolate chips
Direcciones
- Combine and blend flour, baking powder, baking soda, cocoa, salt and cinnamon.
- In another bowl, combine oil and sugar; add one egg at a time and beat well after each.
- Combine both mixtures.
- Add vanilla, sour cream, and grated zucchini blending until well mixed.
- Add chocolate chips.
- Pour into generously greased bundt pan.
- Place on middle rack of oven and bake at 350 F for 50-60 minutes (40 min. for convection) until a wooden skewer comes out clean & dry.
- Allow cake to cook thoroughly on a rack before removing from pan.
- Ice with chocolate buttercream icing of your choice.
