%3C/p%3E%3Cp%3Esubtitle:%20when%20i%20fell%20in%20love%20with%20the%20nytimes%20dining%20section%3C/p%3E%3Cp%3Ei%20still%20have%20the%20nytimes%20clipping%20of%20the%20article%20shoved%20into%20a%20binder%20with%20recipe%20tear%20outs.%20these%20days,%20i%20generally%20browse%20the%20nytimes%20online%20but%20there%20was%20a%20time%20when%20i%20had%20a%20job%20where%20the%20best%20part%20was%20the%20nytimes%20daily%20delivery.%20this%20was%20my%20first%20formal,%20regular%20introduction%20to%20the%20wednesday%20dining%20section.%3C/p%3E%3Cp%3Eyou%20may%20have%20heard%20of%20such%20books%20as%20alone%20in%20the%20kitchen%20with%20an%20eggplant%20or%20what%20we%20eat%20when%20we%20eat%20alone,%20where%20the%20entire%20concept%20rests%20on%20some%20secretive%20meal%20that%20we%20each%20have%20to%20make%20when%20we're%20on%20our%20own.%20now,%20i%20have%20made%20this%20particular%20meal%20for%20others%20but%20i'm%20just%20not%20sure%20if%20it's%20appreciated%20as%20well%20in%20a%20group%20versus%20curling%20up%20alone%20in%20a%20couch%20corner%20after%20an%20exhausting%20day.%3C/p%3E%3Cp%3Eeveryone's%20heard%20of%20putting%20a%20fried%20egg%20on%20top%20of%20almost%20anything%20as%20an%20added%20bonus%20to%20a%20dish.%20however,%20when%20i%20read%20this%20article,%20i%20never%20had.%20it%20sounded%20so%20good%20that%20i%20decided%20to%20go%20home%20and%20make%20it%20that%20very%20night.%20with%20that,%20i%20concocted%20my%20own%20comfort%20food.%20by%20that%20i%20mean%20that%20this%20is%20not%20something%20my%20parents%20ever%20made%20for%20me%20when%20i%20was%20younger%20(i%20have%20some%20of%20those%20too%20but%20that's%20a%20different%20story).%20this%20is%20something%20i%20independently%20discovered,%20and%20have%20made%20my%20own.%20granted,%20i%20did%20have%20to%20be%20of%20age%20enough%20so%20that%20i%20could%20appreciate%20an%20over%20easy%20egg%20and%20how%20the%20runny%20yolk%20seamlessly%20combines%20with%20just%20about%20any%20other%20flavor%20and%20adds%20a%20comforting%20richness%20to%20it.%20once%20i%20discovered%20this,%20there%20really%20was%20no%20stopping%20the%20endless%20combinations%20and%20possibilities.%20and%20each%20one%20tastes%20just%20as%20good%20as%20the%20last.%3C/p%3E%3Cp%3Ethe%20recipe%20below%20is%20the%20first%20one%20i%20saw%20using%20this%20concept%20(polenta,%20eggs%20and%20dark%20leafy%20green)%20but%20now%20i%20put%20eggs%20over%20almost%20anything:%20various%20grains%20(rice,%20quinoa,%20pasta)%20and%20any%20vegetable%20(don't%20stop%20with%20dark%20leafy%20greens).%20it's%20the%20ultimate%20meal:%20quick,%20easy,%20affordable,%20tasty%20and%20comforting.%3C/p%3E%3Cp%3Epolenta,%20greens%20and%20eggs%20for%201%20(adapted%20from%20melissa%20clark,%20nytimes)%20%201-2%20eggs%20(depending%20on%20how%20hungry%20you%20are.%20sometimes%20i%20make%202%20eggs%20just%20so%20that%20i%20can%20have%20the%20two%20yolks)%3C/p%3E%3Cp%3Ei%20usually%20make%20the%20greens%20first%20since%20they%20can%20sit%20for%20a%20little%20bit%20without%20any%20trouble.%20heat%20olive%20oil%20in%20a%20pan,%20add%20lots%20of%20minced%20garlic%20and%20greens.%20cook%20over%20high%20heat%20until%20wilted.%20stir%20in%20red%20pepper%20flakes.%3C/p%3E%3Cp%3Emake%20the%20polenta:%20contrary%20to%20nytimes%20advice,%20i%20use%20quick%20cooking%20polenta%20(not%20quite%20instant%20but%20not%20the%20slow%20cook%20kind).%20bring%203%20cups%20of%20chicken%20stock%20to%20a%20boil,%20reduce%20heat%20and%20add%20polenta,%20start%20whisking.%20once%20the%20polenta%20has%20started%20to%20thicken,%20stir%20in%20salt%20and%20pepper,%20parmesean%20cheese,%20and%20some%20butter.%20keep%20whisking%20until%20the%20polenta%20starts%20to%20pull%20away%20from%20the%20pot.%20cover%20to%20keep%20warm.%3C/p%3E%3Cp%3Efry%20eggs%20in%20some%20olive%20oil.%20the%20olive%20oil%20helps%20the%20whites%20get%20all%20crispy.%20the%20runny%20yolks%20are%20downright%20necessary,%20so%20sunny%20side%20up%20or%20over-easy%20are%20best.%3C/p%3E%3Cp%3Espoon%20polenta%20into%20a%20shallow%20bowl,%20top%20with%20greens%20and%20eggs.%20top%20with%20additional%20parmesean%20cheese.%3C/p%3E){kind=link}
