,%20and%20still%20actually%20taste%20good.%20I%20really%20can't%20stand%20preparing%20meat%20that%20much%20at%20home,%20so%20this%20has%20been%20a%20challenge%20and%20we%20have%20been%20eating%20out%20waaay%20too%20much%20(sushi%20anyone?).%3C/p%3E%3Cp%3EThe%20one%20meal%20that%20I%20have%20enjoyed%20both%20eating%20and%20preparing%20has%20been%20breakfast.%20My%20whole%20life,%20I%20was%20never%20a%20breakfast%20eater.%20Crazy%20right?%20I%20just%20never%20felt%20like%20eating%20in%20the%20morning,%20always%20felt%20a%20bit%20nauseated,%20and%20I%20would%20be%20tired%20and%20cranky%20until%20lunch,%20often%20suffering%20nasty%20headaches%20to%20boot.%20I%20am%20realizing%20now%20that%20what%20I%20needed%20in%20the%20morning%20was%20a%20good%20breakfast%20(duh)!%20I%20have%20also%20realized%20that%20breakfast%20is%20just%20so%20delicious.%20I%20actually%20look%20forward%20to%20waking%20up%20in%20the%20morning%20now%20so%20I%20can%20stumble%20into%20the%20kitchen,%20put%20on%20the%20espresso,%20and%20slowly%20wake%20up%20as%20I%20make%20toast,%20flip%20eggs,%20and%20blend%20frozen%20fruit.%20I%20have%20more%20energy%20all%20day,%20less%20cravings,%20and%20fewer%20headaches.%20Discovering%20breakfast%20has%20been%20a%20life-changing%20experience%20for%20me.%3C/p%3E%3Cp%3EI%20have%20a%20regular%20rotation%20of%20breakfasts%20that%20I%20find%20myself%20eating%20all%20the%20time%20now%20-%20things%20that%20don't%20take%20too%20much%20prep%20(who%20wants%20to%20do%20that%20much%20cooking%20when%20they%20first%20wake%20up%20right?)%20and%20are%20fairly%20healthy.%20Most%20don't%20really%20require%20a%20recipe%20or%20instruction%20-%20like%20one%20of%20my%20favs%20-%20simply%20plain%20yogurt%20with%20berries%20(from%20the%20freezer%20right%20now),%20a%20teaspoon%20of%20honey,%20and%20a%20handful%20of%20granola.%3C/p%3E%3Cp%3ESimilar%20to%20that%20is%20my%20absolute%20obsession%20(something%20I%20also%20find%20myself%20eating%20for%20lunch%20quite%20frequently)%20-%20one%20cup%20frozen%20mixed%20berries%20and%20half%20a%20frozen%20banana%20blended%20until%20thick%20almost%20like%20ice%20cream,%20and%20eaten%20with%20a%20bit%20of%20granola%20and%20some%20raw%20honey%20sprinkled%20on%20top%20(an%20idea%20I%20got%20from%20the%20most%20amazing%20Acai%20Berry%20Bowl%20at%20Swami's%20Cafe%20in%20Encintas,%20California).%20Sometimes%20I%20will%20add%20some%20plain%20yogurt%20to%20that%20as%20well%20to%20add%20some%20creaminess%20or%20extra%20calories%20if%20I%20need%20them.%20It%20is%20super%20filling,%20healthy,%20full%20of%20anti-oxidents,%20gives%20you%20major%20energy%20and%20is%20only%20about%20280%20calories%20(or%20380%20with%20the%20yogurt)%20(as%20long%20as%20you%20don't%20include%20too%20much%20granola)%20and%20honestly%20could%20probably%20be%20enjoyed%20as%20dessert%20as%20well.%3C/p%3E%3Cp%3EMost%20mornings%20though%20I%20go%20for%20a%20simple%20and%20quick%20shot%20of%20protein.%20Just%20a%20single%20fried%20egg%20(I%20break%20the%20yoke%20so%20that%20it%20all%20cooks%20but%20that%20is%20just%20my%20preference),%20eaten%20on%20a%20toasted%20whole-wheat%20English%20Muffin%20with%20a%20teaspoon%20or%20so%20of%20low-fat%20Chevre%20spread%20on%20each%20side.%20Eat%20a%20few%20berries%20or%20half%20a%20grapefruit%20on%20the%20side%20and%20its%20just%20the%20best%20-%20a%20super%20quick%20and%20convenient%20everyday%20breakfast.%20One%20of%20those%20little%20sandwiches%20only%20takes%20about%205%20minutes%20to%20make%20and%20only%20has%20about%20210%20calories.%3C/p%3E%3Cp%3EThe%20recipe%20I%20am%20including%20below%20though%20is%20probably%20for%20my%20all%20time%20favorite%20-%20a%20great%20breakfast%20for%20when%20I%20wake%20up%20famished%20and%20with%20a%20headache%20and%20need%20some%20protein,%20but%20that%20doesn't%20require%20a%20bunch%20of%20chopping%20of%20ingredients%20that%20(lets%20be%20honest)%20probably%20have%20already%20gone%20bad%20in%20my%20fridge.%20Instead,%20it%20just%20requires%20a%20few%20simple%20things%20that%20I%20can%20keep%20on%20hand%20pretty%20much%20all%20the%20time%20and%20is%20one%20of%20my%20all-time%20favorite%20flavor%20combos%20-%20spinach%20and%20Feta.%20Figuring%20out%20how%20to%20make%20a%20good%20omelet%20was%20a%20total%20revelation%20to%20me%20(thank%20you%20once%20again%20Alice%20Waters)%20-%20I%20had%20never%20really%20been%20successful%20at%20it%20-%20and%20there%20are%20so%20many%20variations%20that%20I%20have%20found%20omelet's%20to%20be%20a%20new%20favorite%20standby%20when%20I%20don't%20know%20what%20to%20make%20(for%20just%20about%20any%20meal%20of%20the%20day).%3C/p%3E%3Cp%3ESo%20what%20is%20your%20favorite%20thing%20to%20eat%20for%20breakfast?%3C/p%3E%3Cp%3ESpinach%20&%20Feta%20Omelet%3C/p%3E%3Cp%3E(325%20calories)%3C/p%3E%3Cp%3EFirst,%20prepare%20all%20the%20fillings%20for%20the%20omelet%20and%20set%20within%20reach.%3C/p%3E%3Cp%3EHeat%20a%20small%20non-stick%20skillet%20or%20frying%20pan%20over%20medium%20low%20or%20low%20heat%20(depending%20on%20how%20hot%20your%20stove%20gets).%20It%20is%20important%20to%20choose%20the%20right%20pan%20-%20if%20the%20circumfrence%20is%20too%20big%20then%20the%20omelet%20will%20be%20too%20thin.%20For%20this,%20I%20use%20a%209-inch%20(23%20cm)%20pan%20and%20that%20works%20fine,%20but%20even%20smaller%20would%20work%20great%20also.%20Add%20a%20small%20pat%20of%20butter%20or%20margarine%20to%20the%20pan%20while%20it%20heats.%3C/p%3E%3Cp%3EMeanwhile,%20whisk%20eggs%20to%20light%20and%20foamy.%20Whisk%20in%20fresh%20ground%20black%20pepper%20to%20taste.%20When%20the%20foam%20from%20the%20heating%20butter%20in%20the%20pan%20subsides,%20then%20pour%20the%20whisked%20eggs%20in%20making%20sure%20they%20fill%20the%20pan.%20It%20shouldn't%20sizzle,%20if%20it%20does,%20reduce%20your%20heat%20(the%20key%20really%20seems%20to%20be%20not%20letting%20the%20omelet%20cook%20too%20fast).%20While%20the%20mixture%20sets,%20scrape%20your%20spatula%20around%20the%20sides%20of%20the%20pan,%20bringing%20the%20edges%20of%20the%20omelet%20in%20and%20slightly%20tilt%20the%20pan%20around%20to%20move%20any%20liquid%20egg%20on%20top%20to%20the%20edges%20and%20underneath%20so%20they%20cook%20(for%20this%20omelet,%20honestly,%20I%20don't%20need%20to%20do%20this%20much%20since%20its%20small%20and%20sets%20ups%20fairly%20fast).%3C/p%3E%3Cp%3EWhen%20the%20omelet%20has%20almost%20set,%20sprinkle%20the%20spinach,%20feta%20and%20chives%20evenly%20over%20the%20whole%20thing.%20Increase%20heat%20slightly,%20and%20let%20cook%20until%20feta%20gets%20soft%20and%20the%20eggs%20have%20completely%20set.%20Fold%20the%20omelet%20over%20once%20in%20half%20and%20enjoy%20it%20while%20its%20hot!%3C/p%3E){kind=link}
