.%3C/p%3E%3Cp%3E...and%20we've%20covered%2010%20different%20types%20of%20fillings%3C/p%3E%3Cp%3E10.%20Egg.%3C/p%3E%3Cp%3EI%20think%20you%20now%20have%20enough%20fodder%20to%20last%20you%20more%20than%20a%20week-it's%20pretty%20easy%20once%20you%20have%20the%20dough%20ready%20and%20the%20veggies%20prepared%20and%20kept.%20You%20could%20always%20keep%20extra%20dough,%20say%20for%202%20to%203%20days,%20refrigerated%20so%20you%20can%20quickly%20whip%20up%20a%20yummy%20paratha%20even%20when%20you're%20tired!%3C/p%3E%3Cp%3EI'm%20so%20glad%20and%20grateful%20to%20my%20dear%20friend%20Priya%20for%20introducing%20and%20demonstrating%20to%20me%20this%20paratha.%20It's%20so%20easy%20to%20make%20and%20packs%20in%20quite%20a%20punch,%20in%20terms%20of%20taste%20and%20proteins!%20I%20made%20it%20for%20the%20very%20first%20time%20today%20and%20my%20husband%20absolutely%20loved%20it....try%20it%20out%20and%20see%20for%20yourself%20though!%20I%20do%20think%20that%20this%20technique%20is%20one%20that%20requires%20a%20little%20practice,%20so%20don't%20be%20disheartened%20if%20you%20don't%20get%20it%20right%20the%20first%20time...just%20keep%20trying%20and%20cracking%20more%20eggs!%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20combine%20the%20flour%20and%20salt%20well.%3C/p%3E%3Cp%3EAdd%20the%20water%20gradually%20and%20combine%20with%20the%20flour%20to%20make%20a%20soft%20but%20firm%20dough.%20Knead%20until%20smooth%20for%201%20to%202%20minutes.%20Leave%20it%20to%20rest,%20covered%20with%20a%20cloth,%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EFor%20the%20stuffing:%3C/p%3E%3Cp%3ETake%20one%20egg%20per%20person,%20to%20make%202%20parathas.%3C/p%3E%3Cp%3EBreak%20the%20egg%20into%20a%20bowl%20and%20mix%20in%20salt%20and%20pepper%20to%20taste.%20Beat%20for%20a%20few%20seconds%20with%20a%20balloon%20whisk%20or%20a%20fork.%20You%20can%20add%20any%20other%20seasonings%20of%20your%20choice.%20I%20had%20an%20extra%20sachet%20of%20seasonings%20from%20a%20pizza%20outlet,%20which%20I%20dunked%20into%20the%20egg%20mixture!%3C/p%3E%3Cp%3ETake%20a%20slightly%20larger-than-a-lemon-sized%20ball%20and%20roll%20it%20out%20until%20it's%20about%206%20inches%20in%20diameter.%3C/p%3E%3Cp%3EFold%20into%20half.%3C/p%3E%3Cp%3EFold%20this%20again%20into%20half,%20so%20it%20becomes%20a%20quarter.%3C/p%3E%3Cp%3EDo%20not%20press,%20just%20dust%20with%20flour%20and%20roll%20this%20out,%20applying%20only%20slight%20pressure%20on%20it.%3C/p%3E%3Cp%3ETransfer%20to%20the%20tawa/griddle%20(which%20I%20assume%20you%20must%20have%20already%20kept%20on%20the%20stove%20to%20heat%20up!).%3C/p%3E%3Cp%3EWait%20for%201%20to%202%20minutes%20and%20then%20flip%20over.%3C/p%3E%3Cp%3ENudge%20the%20roti%20with%20your%20flat%20spatula%20to%20see%20if%20the%20dough%20has%20lost%20its%20stickiness.%3C/p%3E%3Cp%3EYou%20will%20be%20able%20to%20see%20the%20folds%20of%20the%20roti-gently%20nudge%20the%20top%20flap%20away%20from%20the%20lower%20one.%3C/p%3E%3Cp%3ERaise%20it%20up,%20holding%20it%20with%20either%20your%20spatula,%20your%20fingers,%20or%20if%20you%20are%20squeamish%20about%20the%20heat,%20then%20use%20a%20clean%20cotton%20cloth%20to%20hold%20the%20flap%20up.%3C/p%3E%3Cp%3ENow%20pour%20the%20egg%20mixture%20into%20this%20pocket,%20right%20under%20the%20flap.%20Let%20it%20flow%20into%20the%20roti,%20making%20sure%20it%20does%20not%20flow%20out.%20Quickly%20leave%20the%20flap%20you're%20holding,%20letting%20it%20just%20fall%20back%20onto%20the%20roti.%3C/p%3E%3Cp%3EWait%20for%202%20more%20minutes,%20spread%20some%20oil/ghee/butter,%20and%20when%20you%20see%20the%20egg%20mixture%20has%20coagulated,%20flip%20over%20the%20roti%20and%20cook%20that%20side%20too%20for%201%20to%202%20minutes.%20Again%20spread%20a%20little%20oil/ghee/butter.%3C/p%3E%3Cp%3ETake%20off%20the%20flame%20when%20its%20brown%20all%20over%20and%20the%20egg%20inside%20has%20cooked.%3C/p%3E%3Cp%3EServe%20with%20a%20dot%20of%20butter%20on%20top.%3C/p%3E%3Cp%3ENow%20for%20the%20step-by-step%20pictures%20(remember%20I%20said%20my%20camera%20has%20died%20on%20me?%20So%20these%20pics%20are%20the%20best%20I%20could%20manage%20on%20my%20cellphone!).%3C/p%3E%3Cp%3EAfter%20I%20folded%20it%20twice,%20into%20the%20triangle%20shape%20above,%20I%20rolled%20it%20outwards%20once%20again.This%20is%20after%20it%20has%20been%20heated%20on%20the%20tawa%20for%202+%20minutes.%20You%20can%20see%20the%20flaps%20clearly%20now.Lifting%20the%20top%20flap%20with%20my%20spatula.After%20I%20poured%20the%20egg%20mixture%20inside.%20Some%20of%20it%20slipped%20out...The%20final%20product!%3C/p%3E){kind=link}
