%20and%20currants%20make%20the%20perfect%20filling%20but%20this%20week%E2%80%99s%20recipe%20for%20the%20Tuesdays%20with%20Dorie%20bakers%20put%20that%20filling%20combination%20to%20the%20test.%3C/p%3E%3Cp%3EUpon%20reading%20the%20ingredient%20list%20for%20the%20filling,%20I%20was%20completely%20skeptical,%20a%20little%20worried%20actually;%20my%20mother%20was%20visiting%20and%20she%20would%20be%20tasting%20them%20too.%20%20While%20sharing%20rugelach%20with%20your%20mom%20sounds%20harmless,%20keep%20in%20mind%20that%20rugelach%20is%20one%20of%20her%20favorite%20things%20and%20she%20likes%20them%20the%20way%20I%20make%20them;%20no%20filling%20upgrades%20needed%20or%20wanted.%20%20How%20could%20I%20possibly%20dump%20chocolate,%20coconut%20and%20cherries%20into%20her%20idea%20of%20perfection?%20%20So%20I%20compromised.%20%20After%20mixing%20up%20a%20double%20batch%20of%20dough%20so%20I%20could%20send%20mom%20home%20with%20a%20plate%20of%20goodies,%20I%20rolled%20out%20the%20first%20portion%20with%20cinnamon%20sugar,%20pecans%20and%20currants.%20%20For%20the%20second%20portion,%20I%20combined%20cinnamon%20sugar,%20coconut%20and%20chocolate%20chips.%3C/p%3E%3Cp%3EThe%20directions%20call%20for%20rolling%20out%20a%20very%20thin%20sheet%20of%20dough%20that%20is%2012%E2%80%B3x6%E2%80%B3%20and%20then%20topped%20and%20shaped%20into%20a%20foot%20long%20spiral%20that%20is%20about%20an%20inch%20or%20so%20thick%20as%20well%20as%20tall.%20%20If%20you%20cut%20them%20as%20instructed,%20you%20get%20a%20lot%20of%20single%20bite%20pastries%20making%20this%20a%20great%20treat%20to%20give%20as%20gifts%20or%20share%20at%20a%20cookie%20swap.%20%20But%20for%20rugelach%20connoisseurs%20like%20us,%20bite%20sized%20wasn%E2%80%99t%20going%20to%20cut%20it.%3C/p%3E%3Cp%3EThe%20secret%20to%20perfect%20rugelach,%20use%20lots%20of%20flour%20to%20roll%20it%20out%20but%20brush%20it%20off%20both%20sides%20or%20it%20will%20make%20them%20taste%20doughy.%3C/p%3E%3Cp%3EAs%20I%20mentioned,%20I%20compromised,%20I%20added%20currants%20rather%20than%20cherries%20but%20kept%20the%20coconut,%20pecans%20and%20chocolate%20and%20spread%20them%20over%20a%20liberal%20dusting%20of%20cinnamon%20sugar.%3C/p%3E%3Cp%3EIn%20my%20opinion,%20the%20more%20pronounced%20the%20spiral,%20the%20better%20the%20flavors%20blend.%20%20To%20achieve%20this,%20I%20rolled%20out%20the%20rectangle%20of%20dough%20a%20little%20wider%20so%20that%20mine%20was%20about%2012%E2%80%B3x%208%E2%80%B3%20and%20only%20about%201/8%E2%80%B3%20thick.%20%20Despite%20this%20fact,%20the%20dough%20was%20still%20cool%20enough%20to%20work%20with%20and%20it%20rolled%20up%20easily.%3C/p%3E%3Cp%3EOne%20step%20I%20completely%20eliminated%20was%20to%20freeze%20the%20rolled%20and%20filled%20dough.%20%20Honestly,%20that%20sounded%20like%20a%20disaster%20waiting%20to%20happen.%20%20With%20my%20spiral%20still%20on%20the%20table,%20I%20quickly%20cut%20it%20into%20thick%20slices,%20on%20the%20bias.%20%20This%20change%20affected%20the%20yield%20greatly;%20my%20batch%20of%20dough%20only%20made%20about%2018%20thick%20slices.%3C/p%3E%3Cp%3EOne%20other%20change%20I%20made,%20no%20egg%20wash.%20%20The%20leftover%20melted%20butter%20wasn%E2%80%99t%20going%20to%20be%20wasted%20on%20my%20watch%20and%20I%20brushed%20it%20over%20each%20roll%20along%20with%20a%20dusting%20of%20cinnamon%20sugar%20before%20they%20went%20into%20the%20oven.%3C/p%3E%3Cp%3EOnce%20again,%20the%20recipe%20called%20for%20baking%20the%20rolls%20at%20400F%20and%20that%20worried%20me.%20%20When%20I%20prepared%20the%20last%20Baking%20Chez%20Moi%20recipe,%20Cranberry%20Crackle%20Tart,%20the%20instructions%20to%20bake%20at%20400F%20turned%20out%20badly%20for%20me.%20%20Perhaps%20the%20oven%20in%20our%20new%20home%20is%20a%20little%20hot,%20or%20maybe%20Dorie%E2%80%99s%20oven%20is%20a%20little%20cool,%20either%20way,%20I%20wasn%E2%80%99t%20taking%20any%20chances%20and%20I%20baked%20them%20at%20375F.%20%20Oddly%20enough,%20at%20this%20temperature,%20they%20baked%20in%20the%20time%20called%20for%20in%20the%20recipe.%20%20Looks%20like%20I%20will%20be%20paying%20close%20attention%20to%20the%20oven%20temperature%20in%20the%20recipes%20from%20now%20on!%3C/p%3E%3Cp%3EAnd%20as%20Dorie%20suggests,%20the%20perfect%20companion%20to%20a%20cup%20of%20tea%20on%20a%20dreary%20winter%20day.%3C/p%3E%3Cp%3ETo%20see%20what%20the%20other%20bakers%20came%20up%20with,%20be%20sure%20to%20visit%20the%20Tuesdays%20with%20Dorie%20website%20and%20if%20you%20like,%20buy%20one%20of%20the%20two%20books%20we%20are%20baking%20from%20and%20bake%20along%20with%20us!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
