%20on%20a%20designated%20day.%20I%20thoroughly%20enjoyed%20reading%20Lisa%E2%80%99s%20The%20Gonzo%20Gourmet,%20which%20is%20filled%20with%20many%20wonderful%20recipes.%20Her%20style%20and%20blog%20lean%20towards%20local%20foods,%20mostly%20healthy%20but%20an%20occasional%20indulgent%20recipe,%20and%20it%20feels%20like%20we%20have%20much%20in%20common%20%E2%80%93%20from%20consuming%20wine%20while%20cooking%20(not%20when%20I%20prepared%20her%20recipe%20%E2%80%93%20this%20time%20%E2%80%93%20since%20it%20was%2010AM!)%20to%20even%20using%20the%20same%20recipe%20as%20the%20basis%20for%20our%20bar%20nuts%20(from%20Union%20Square%20Caf%C3%A9).%3C/p%3E%3Cp%3EWe%20needed%20a%20hearty%20breakfast%20to%20carry%20us%20until%20we%20got%20to%20the%20Slow%20%20Food%20St.%20Louis%20Feast%20in%20the%20Field%20Dinner%20at%20Claverach%20Farm,%20which%20started%20at%204PM.%20Since%20we%20were%20still%20swimming%20in%20zucchini%20and%20had%20some%20chorizo%20in%20the%20freezer%20that%20needed%20used,%20I%20looked%20through%20the%20Breakfast%20category.%20The%20Veggie%20Frittata%20caught%20my%20eye.%20While%20the%20original%20recipe%20is%20meatless%20and%20cheeseless%20and%20uses%20peas%20and%20asparagus,%20I%20knew%20this%20would%20be%20a%20versatile%20recipe,%20and%20it%20did%20not%20disappoint.%20Because%20I%20must%20have%20greatly%20increased%20the%20amount%20of%20%E2%80%9Cfilling,%E2%80%9D%20I%20had%20to%20double%20the%20number%20of%20eggs%20to%20cover%20the%20veggies,%20chorizo,%20and%20cheese%20(my%20addition).%3C/p%3E%3Cp%3ECraig%20commented%20that%20it%E2%80%99s%20similar%20to%20a%20breakfast%20casserole,%20and%20I%20agree%20with%20one%20big%20advantage.%20I%20can%20never%20get%20egg-based%20casseroles%20to%20cook%20in%20a%20reasonable%20amount%20of%20time.%20They%20always%20take%20longer%20than%20the%20recipe%20indicates.%20Much%20longer.%20Since%20this%20is%20first%20cooked%20on%20the%20stove%20before%20baking,%20it%20is%20much%20quicker%20to%20prepare.%20I%20also%20appreciated%20that%20I%20saut%C3%A9ed%20the%20veggies%20(and%20chorizo)%20in%20the%20same%20cast%20iron%20skillet%20that%20it%20bakes%20in%20for%20easy%20clean%20up.%20Lisa%20mentions%20this%20is%20tasty%20for%20dinner.%20Great%20idea.%3C/p%3E%3Cp%3EThanks%20for%20the%20recipe%20inspiration,%20Lisa!%20This%20is%20a%20keeper.%3C/p%3E%3Cp%3EBreakfast%20Frittata%3C/p%3E%3Cp%3E4%20generous%20servings%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20450%C2%B0%20F.%3C/p%3E%3Cp%3EIn%20an%20oven%20proof%2010-inch%20skillet%20over%20medium%20heat%20(cast%20iron%20is%20ideal),%20cook%20chorizo%20until%20done.%20Remove%20and%20drain%20on%20paper%20towels.%3C/p%3E%3Cp%3EWipe%20out%20the%20pan%20and%20heat%20the%20olive%20oil.%20Add%20the%20onions%20and%20saut%C3%A9%20until%20soft,%20about%205%20minutes.%20Add%20the%20squash%20and%20zucchini%20and%20saut%C3%A9%20until%20tender%20about%2010%20minutes%20or%20so.%3C/p%3E%3Cp%3EWhile%20the%20vegetables%20cook,%20beat%20the%20eggs%20and%20season%20to%20taste%20with%20salt%20and%20pepper.%20Add%20the%20eggs%20to%20the%20skillet,%20twisting%20the%20skillet%20(use%20an%20oven%20mitt)%20to%20move%20the%20eggs%20evenly%20over%20the%20vegetables.%20Add%20the%20cheese%20and%20basil.%3C/p%3E%3Cp%3ECook%20the%20eggs%20until%20set,%20about%208-10%20minutes.%20It%E2%80%99s%20okay%20if%20they%E2%80%99re%20still%20a%20bit%20runny%20on%20top.%20Place%20the%20skillet%20in%20the%20oven%20for%20another%2010-15%20minutes%20until%20the%20eggs%20have%20cooked%20and%20are%20no%20longer%20runny.Slice%20and%20enjoy.%20Salsa%20is%20a%20nice%20accompaniment.%3C/p%3E){kind=link}
