.%20When%20I%20looked%20at%20her%20%E2%80%9CAbout%E2%80%9D%20section,%20I%20saw%20Erin%E2%80%99s%20a%20Purdue%20Boilermaker,%20just%20like%20Craig,%20so%20I%20knew%20I%E2%80%99d%20find%20something%20good.%20By%20the%20time%20this%20is%20posted,%20we%E2%80%99ll%20know%20who%20won%20the%20Penn%20State-Purdue%20game.%20Nittany%20Lions%20roar!%20I%20appreciate%20how%20philanthropic%20Erin%20is%20in%20her%20support%20of%20various%20online%20bake-offs,%20such%20as%20Frosting%20for%20the%20Cause%20and%20championing%20the%20use%20of%20local%20and%20organic.%3C/p%3E%3Cp%3EA%20number%20of%20things%20did%20catch%20my%20eye%20(Tomato%20Jam,%20Peanut%20Butter,%20and%20Banana%20Cookies%20with%20Chocolate%20Frosting),%20but%20I%20settled%20on%20the%20Spicy%20Corn%20Muffins%20since%20we%20were%20having%20black%20bean%20butternut%20squash%20chili,%20and%20we%20had%20the%20last%20of%20our%20CSA%20fresh%20corn%20to%20use.%20We%20learned%20late%20season%20corn%20is%20weird.%20Some%20ears%20are%20so%20crazy-spare%20that%20you%20get%2020%20kernels%20per%20ear,%20and%20the%20worms%20love%20this%20stuff.%20Nonetheless,%20I%20really%20liked%20the%20idea%20of%20individual%20cornbreads%20since%20we're%20only%20cooking%20for%20two%20these%20days,%20and%20I%E2%80%99m%20assuming%20these%20will%20freeze%20well%20for%20future%20soup/chili%20nights.%20I%20made%20minimal%20changes,%20not%20surprising%20really%20since%20I%20was%20baking,%20one%20of%20the%20few%20times%20I%20cannot%20embellish%20a%20recipe.%20I%20subbed%20some%20white%20whole%20wheat%20flour%20for%20the%20AP,%20amazing%20cumin%20cheese%20from%20The%20Cheese%20People%20we%20got%20at%20the%20last%20Ellisville%20Farmers%E2%80%99%20Market%20for%20the%20cheddar,%20and%20used%20red%20jalapenos%20I%20roasted%20and%20froze%20this%20summer.%20The%20only%20issue%20I%20had%20was%20that%20my%20muffins%20browned%20much%20quicker%20than%20the%20recipe%20indicates,%20which%20was%20actually%20quite%20to%20my%20liking.%20I%20really%20appreciated%20Erin%E2%80%99s%20hints%20and%20tips%20below%20in%20italics.%20These%20are%20really%20good.%3C/p%3E%3Cp%3ESpicy%20Corn%20Muffins%3C/p%3E%3Cp%3EMakes%2015%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20400%20F%20and%20grease/line%20two%20muffin%20pan%20(I%20got%2015%20muffins%20out%20of%20a%20batch).%3C/p%3E%3Cp%3EChop%20the%20jalape%C3%B1o.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20whisk%20together%20the%20flours,%20cornmeal,%20sugar,%20baking%20powder,%20baking%20soda,%20and%20salt.%20Make%20a%20well%20in%20the%20center%20of%20the%20dry%20ingredients.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl%20mix%20together%20the%20buttermilk,%20butter,%20olive%20oil,%20egg,%20and%20egg%20yolk.%20I%20did%20this%20in%20my%202%20cup%20pyrex%20measuring%20cup.%3C/p%3E%3Cp%3ESlowly%20pour%20the%20liquid%20into%20the%20flour%20mixture%20and%20carefully%20whisk%20it%20all%20together.%20Mix%20only%20until%20the%20liquid%20and%20flour%20are%20just%20barely%20incorporated.%20Over%20mixed%20muffins%20are%20a%20sin.%3C/p%3E%3Cp%3EGently%20fold%20in%20the%20corn%20kernels,%20jalape%C3%B1os,%20and%20cheese.%20Scoop%20into%20the%20muffins%20tins.%20Be%20sure%20to%20only%20fill%202/3%20of%20the%20way%20full!%3C/p%3E%3Cp%3EBake%2015-18%20minutes,%20or%20until%20golden%20brown%20and%20an%20inserted%20toothpick%20comes%20out%20clean.%20Mine%20bakes%20much%20faster;%20check%20at%2011-12%20minutes.%3C/p%3E%3Cp%3EAllow%20to%20cool%20before%20consuming!%20That%20is%20actually%20important%20with%20this%20recipe%20because%20the%20muffins%20fall%20apart%20if%20you%20try%20and%20eat%20them%20hot%20out%20of%20the%20oven.%3C/p%3E){kind=link}
