.%20As%20usual,%20I%20jumped%20too%20soon.%20There's%20this%20nut-job%20of%20a%20stray%20dog%20who%20climbs%20up%20on%20our%20terrace%20garden%20every%20single%20night%20and%20he%20has%20taken%20it%20as%20is%20life's%20singleminded%20motto%20to%20dig%20out%20every%20inch%20of%20soil%20in%20the%20garden,%20and%20along%20with%20it%20every%20thing%20that%20I%20sow.%20It%20is%20such%20heart%20ache%20for%20me%20that%20I%20cannot%20bear%20to%20step%20into%20the%20garden%20and%20see%20the%20mini%20earthquake%20unleashed%20by%20that%2010%20kilo%20dog.%20He%20sure%20was%20an%20earthmover%20in%20his%20previous%20birth!%20Now%20that%20I've%20vented%20my%20anger%20and%20frustration,%20I%20can%20get%20back%20to%20talking%20about%20good%20food%20things.%3C/p%3E%3Cp%3ESince%20the%20last%20few%20Fridays,%20I've%20been%20making%20a%20big%20platter%20of%20these%20fully%20loaded%20nachos%20for%20dinner.%20It's%20like%20a%20big%20salad%20with%20lots%20of%20veggies,%20beans,%20cheese%20and%20of%20course%20tortilla%20chips.%20If%20you%20get%20down%20to%20baking%20these%20chips,%20then%20you%20have%20a%20completely%20healthy,%20high%20fibre,%20high%20protein%20snack%20ready%20to%20serve%20for%20a%20house%20party.%20I%20plan%20to%20bake%20these%20chips%20in%20advance%20for%20this%20weekend.%3C/p%3E%3Cp%3EThis%20is%20the%20perfect%20party%20dish,%20easily%20scaled%20up.%20You%20can%20assemble%20these%20in%20smaller%20foil%20containers,%20sprinkle%20cheese%20and%20bake%20so%20it%20can%20be%20shared%20between%20two%20people.%3C/p%3E%3Cp%3EPreparing%20the%20beans:%3C/p%3E%3Cp%3EThese%20are%20not%20exactly%20refried%20beans%20because%20in%20the%20former,%20they%20are%20mashed%20to%20a%20coarse%20paste.%20Here%20the%20beans%20are%20pressure%20cooked%20until%20soft%20but%20each%20holding%20their%20shape%20and%20not%20mushy.%20They%20are%20then%20saut%C3%A9ed%20with%20some%20seasonings%20and%20kept%20aside%20for%20use%20in%20the%20nachos.%20You%20could%20%20make%20these%20ahead%20of%20time%20and%20refrigerate%20up%20to%2010%20days%20in%20an%20airtight%20container.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ESoak%20the%20rajma%20overnight%20with%20a%20pinch%20of%20baking%20soda.%3C/p%3E%3Cp%3EDrain,%20wash%20well%20and%20add%201%20cup%20water%20to%20this%20or%20enough%20water%20to%20completely%20immerse%20the%20beans%20in%20a%20utensil%20that%20goes%20inside%20the%20pressure%20cooker.%3C/p%3E%3Cp%3EPressure%20cook%20the%20beans%20for%2010-12%20minutes.%20(After%20two%20whistles,%20keep%20on%20sim%20for%2010-12%20minutes)%20The%20cooking%20time%20depends%20on%20the%20size%20of%20the%20rajma,%20for%20bigger%20sizes%20you%20may%20have%20to%20cook%20for%20slightly%20longer%20time.%20You%20want%20the%20beans%20to%20be%20cooked%20thoroughly,%20pressing%20with%20the%20back%20of%20the%20ladle%20or%20the%20thumb%20should%20mash%20it%20to%20a%20paste%20but%20it%20should%20hold%20its%20shape.%20Drain%20any%20excess%20water%20and%20keep%20aside.%3C/p%3E%3Cp%3EIn%20a%20heavy%20bottomed%20pan,%20heat%20the%20olive%20oil.%20Saute%20the%20onion%20and%20garlic%20with%20a%20pinch%20of%20salt%20until%20the%20onions%20are%20soft.%20Add%20the%20drained%20cooked%20rajma,%20cumin%20powder,%20chipotle,%20salt,%20coriander.%20On%20a%20low%20heat,%20gently%20saute%20and%20let%20all%20the%20seasonings%20coat%20the%20rajma%20for%205-7%20minutes.%20Once%20this%20is%20done,%20keep%20aside%20until%20use.%3C/p%3E%3Cp%3EFully%20Loaded%20Nachos%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E200%20grams%20Tortilla%20Chips%20-%20salted%20or%20flavoured%20(I%20use%20the%20salted%20variety%20of%20this%20brand%20and%20find%20them%20extremely%20crisp%20with%20good%20taste)%3C/p%3E%3Cp%3E1%20big%20onion,%20finely%20chopped%3C/p%3E%3Cp%3E2%20medium%20tomatoes,%20deseeded%20and%20finely%20chopped%3C/p%3E%3Cp%3E1%20large%20green%20capsicum,%20deseeded%20and%20diced%3C/p%3E%3Cp%3E1/4%20cup%20cooked%20corn%20kernels%20(optional)%3C/p%3E%3Cp%3Esome%20sliced%20pickled%20jalape%C3%B1o%20(how%20much%20or%20how%20little,%20depends%20on%20your%20preference)%3C/p%3E%3Cp%3E1/2%20cup%20grated%20cheddar%20cheese%3C/p%3E%3Cp%3E1%20cup%20of%20seasoned%20rajma%20beans%20(method%20above)%3C/p%3E%3Cp%3EFresh%20coriander,%20chopped%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200C.%20If%20you%20are%20using%20an%20OTG%20with%20heating%20coils%20on%20the%20top%20and%20bottom,%20make%20sure%20the%20top%20heating%20coil%20is%20on,%20for%20the%20cheese%20to%20melt.%3C/p%3E%3Cp%3EIn%20a%20large%20oven%20proof%20dish%20place%20half%20the%20chips%20in%20one%20layer.%20Top%20with%20half%20the%20onions,%20tomatoes,%20capsicum,%20corn,%20jalape%C3%B1o,%20rajma%20and%20cheese.%20Place%20the%20remaining%20chips%20in%20a%20single%20layer%20over%20this%20and%20sprinkle%20all%20the%20remaining%20ingredients%20with%20coriander%20and%20half%20the%20cheese%20right%20on%20top.%3C/p%3E%3Cp%3EPlace%20this%20in%20a%20hot%20oven%20for%207-8%20minutes%20until%20the
