%20but%20I%20have%20plenty%20of%20other%20food%20memories%20from%20that%20trip,%20like%20tripe,%20thin-crust%20pizza,%20rich,%20creamy%20gelato,%20and%20the%20special%20feeling%20of%20eating%20dinner%20way%20past%20my%20bedtime.%3C/p%3E%3Cp%3EYou%E2%80%99re%20probably%20wondering%20about%20the%20tripe.%20One%20of%20our%20hotel%20restaurants%20featured%20a%20set%20menu.%20For%20one%20of%20the%20courses,%20I%20immediately%20dug%20into%20what%20I%20thought%20was%20a%20pile%20of%20wide%20noodles%20in%20a%20cream%20sauce.%20It%20took%20me%20a%20while%20to%20look%20up%20and%20notice%20that%20no%20one%20else%20in%20my%20family%20was%20touching%20the%20%E2%80%9Cnoodles.%E2%80%9D%20Turns%20out%20it%20was%20a%20pile%20of%20tripe!%20My%20family%20still%20jokes%20about%20it%20to%20this%20day.%20Of%20course%20I%20remember%20the%20thin-crust%20pizza%20a%20lot%20more%20fondly%20than%20my%20creamy%20%E2%80%9Cnoodles%E2%80%9D%20%E2%80%93%20the%20perfectly%20crispy%20crust,%20the%20simple%20tomato%20sauce%20that%20tasted%20like%20ripe%20summer%20tomatoes,%20the%20creamy%20Mozzarella%20cheese,%20and%20the%20aromatic%20fresh%20basil.%20I%20remember%20eating%20an%20entire%20pizza%20by%20myself%20because%20the%20crust%20was%20so%20thin,%20and%20washing%20it%20down%20with%20a%20glass%20of%20coke%20with%20no%20ice%20(the%20European%20way,%20which%20I%20prefer!)%3C/p%3E%3Cp%3EI%20was%20really%20excited%20when%20I%20got%20this%20recipe%20for%20this%20month%E2%80%99s%20Italian%20recipe%20swap,%20because%20it%20came%20from%20someone%20who%20has%20also%20experienced%20real%20Italian%20pizza.%20Krystal%20of%20Mrs.%20Regueiro%E2%80%99s%20Plate%20recently%20returned%20from%20a%20vacation%20in%20Italy.%20She%20couldn%E2%80%99t%20choose%20just%20one%20Italian%20recipe%20to%20share,%20so%20gave%20the%20recipient%20a%20choice%20%E2%80%93%20this%20thin-crust%20pizza%20or%20a%20creamy%20lemon%20gelato.%20The%20latter%20looked%20so%20amazing,%20but%20since%20we%20don%E2%80%99t%20own%20an%20ice%20cream%20maker,%20I%20chose%20the%20pizza.%20%20She%20says%20this%20recipe%20gives%20you%20a%20taste%20of%20Italy%20at%20home,%20and%20I%20would%20have%20to%20agree.%20Cook%E2%80%99s%20Illustrated%20%20really%20got%20it%20right,%20as%20eating%20it%20conjured%20up%20the%20Italian%20pizza%20I%20ate%20over%2015%20years%20ago.%20The%20only%20difference%20is%20that%20instead%20of%20ice-less%20coke%20or%20rich%20hot%20chocolate,%20I%20got%20to%20enjoy%20it%20with%20some%20red%20wine!%3C/p%3E%3Cp%3EThis%20recipe%20makes%20two%2012-inch%20pizzas.%20We%20topped%20one%20with%20grated%20Mozzarella%20cheese,%20thinly%20sliced,%20locally%20grown%20tomatoes,%20and%20fresh%20basil.%20The%20other%20one%20was%20our%20version%20of%20a%20Quattro%20Formaggi%20(four%20cheeses):%20Mozzarella,%20Italian%20Fontina,%20Parmesan,%20and%20Ricotta%20(I%20wanted%20blue%20or%20Gorgonzola,%20but%20Levi%20and%20Dustin%20won%20this%20time).%20The%20recipe%20makes%20a%20ton%20of%20delicious%20sauce,%20so%20keep%20that%20in%20mind%20and%20halve%20the%20sauce%20recipe%20if%20you%20only%20want%20to%20use%20it%20for%20your%20pizzas.%20We%20are%20looking%20forward%20to%20using%20the%20leftover%20sauce%20in%20a%20pasta%20dish%20soon.%3C/p%3E%3Cp%3EThin-Crust%20Pizza%3C/p%3E%3Cp%3E(From%20Mrs.%20Regueiro%E2%80%99s%20Plate,%20originally%20from%20Cooks%20Illustrated)%3C/p%3E%3Cp%3EFor%20the%20Dough:%3C/p%3E%3Cp%3EAt%20least%2024%20Hours%20before%20prepare%20the%20dough.%20In%20a%20food%20processor,%20process%20the%20flour,%20sugar,%20and%20yeast%20until%20combined.%20With%20the%20machine%20running,%20slowly%20add%20ice%20water%20through%20the%20feed%20tube%20and%20process%20until%20a%20dough%20forms%20and%20no%20dry%20flour%20remains.%20Let%20dough%20stand%20for%2010%20minutes.%3C/p%3E%3Cp%3EAdd%20oil%20and%20salt%20and%20process%20until%20dough%20forms%20satiny,%20sticky%20ball%20%E2%80%93%20about%2030%20to%2060%20seconds.%20Remove%20dough%20from%20bowl,%20knead%20briefly%20on%20lightly%20oiled%20work%20area%20until%20smooth,%20about%201%20minute.%20Transfer%20to%20a%20lightly%20oiled%20bowl,%20cover%20with%20plastic%20wrap%20and%20refrigerate%20for%20at%20least%2024%20hours%20and%20up%20to%203%20days.%3C/p%3E%3Cp%3ETo%20make%20the%20sauce,%20combine%20all%20ingredients%20in%20a%20food%20processor.%20Blend%20until%20smooth,%20about%2030%20seconds.%20Transfer%20to%20a%20container%20and%20refrigerate%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EOne%20hour%20before%20baking%20the%20pizza,%20adjust%20the%20oven%20rack%20to%20the%20second%20highest%20position%20and%20place%20a%20baking%20stone%20on%20the%20rack%20to%20preheat.%20Preheat%20the%20oven%20to%20500%CB%9A%20degrees.%3C/p%3E%3Cp%3ERemove%20the%20pizza%20dough%20from%20the%20refrigerator%20and%20divide%20in%20half.%20Form%20each%20half%20into%20a%20ball%20and%20place%20on%20a%20lightly%20oiled%20baking%20sheet,%20with%20at%20least%203%20to%205%20inches%20apart.%20Cover%20loosely%20with%20plastic%20wrap%20coated%20with%20cooking%20spray%20and%20let%20sit%20at%20room%20temperature%20for%201%20hour.%3C/p%3E%3Cp%3ECoat%201%20ball%20of%20dough%20generously%20with%20flour,%20and%20place%20on%20a%20well-floured%20counter%20top.%20Using%20fingertips,%20gently%20flatten%20into%208-inch%20disk.%20Leave%201%20inch%20of%20the%20outer%20edge%20a%20little%20thicker,%20while%20gently%20stretching%20the%20middle%20until%20you%20have%20a%2012-inch%20round.%20Lay%20out%20a%20sheet%20of%20parchment%20paper%20and%20spread%20a%20handful%20of%20cornmeal%20on%20the%20paper%20(if%20using).%20Place%20the%20dough%20on%20the%20paper.%3C/p%3E%3Cp%3ESpread%201/2%20cup%20tomato%20sauce%20over%20pizza%20(we%20didn%E2%80%99t%20really%20measure%20%E2%80%93%20just%20spooned%20some%20on%20until%20it%20looked%20right%20to%20us),%20add%20a%20couple%20handfuls%20of%20cheese%20and%20whatever%20other%20toppings%20you%20are%20using.%20Drizzle%20a%20little%20olive%20oil%20over%20the%20top%20of%20the%20pizza%20and%20lightly%20sprinkle%20with%20Kosher%20salt.%20Carefully%20lift%20the%20parchment%20paper%20with%20pizza%20on-top%20and%20place%20onto%20the%20pizza%20stone.%20Bake%20until%20the%20crust%20is%20golden%20and%20the%20cheese%20is%20bubbling,%20about%2010-12%20minutes.%20Remove%20pizza%20and%20place%20on%20wire%20rack%20for%205%20minutes%20before%20slicing%20and%20serving.%3C/p%3E%3Cp%3ERepeat%20steps%20above%20to%20make%20and%20bake%20second%20pizza.%20Enjoy%20with%20your%20favorite%20bottle%20of%20red%20wine.%3C/p%3E){kind=link}
