- In a large pot, heat oil; add in minced and sliced vegetables and saute/fry till barely tender. Add in remaining ingredients, mixing well. Cover and simmer for 20 min or possibly till warm. Adjust seasonings with salt and chili
- pwdr to taste. Don't OVERCOOK Or possibly VEGETABLES WILL BECOME MUSHY.
