Receta Tofu Gratin

Today's post is a a healthy dish - TOFU. Tofu can be prepared in many ways, including soups, meats, salads and desserts including Cheese Tofu, Tofu Tiramisu, Tofu Chiffon cake and many more. To some Tofu may be bland and tasteless but in my opinion with some simple ingredients Tofu can be the most wonderful dish in the world.

Saw this baked Tofu recipe in the newspaper two weeks ago written by freelance writer Sylvia Tan. The tofu is prepared in Japanese way using miso paste mixed with soya milk to a creamy thick white sauce. It worked beautifully well with a wonderfully rich flavor. I really enjoyed this baked Tofu very much and even used half of the thick sauce (with 1/2 tbsp wasabi added) to bake with salmon steak (about 300g). Sorry, I forgot to take picture of the salmon dish but trust me it was really very delicious and nutritious dish that can be easily made at home. Mix wasabi into the thick sauce and switch oven to 200C. Bake the salmon steak (or use any white fish) with the thick sauce on it for about 12 mins or until cooked. Then garnish the same way as the tofu and serve immediately with hot rice.

You need a quick hand with the whisk when making the roux - a flour paste made in this case with olive oil, not butter. And you need to drain the tofu so that you do not end up with a watery sauce

Method

Heat olive oil over a gentle flame and add flour, whisking briefly to form a roux (paste).

Add soya milk (or use low fat milk) to the paste, whisking all the while until a sauce forms and thickens.

Add miso paste (1 tbsp or add to taste) and continue whisking, then season with sugar and sake wine.

Heat oven to 180C.

Cut each drained and chilled tofu cake into four pieces.

Place a tofu square in a ramekin or individual bowl and season with two spoonfuls, or more, of the sauce. Repeat with the rest of the tofu squares or serve it family-style in a shallow baking dish.

Place tofu squares in the oven. Bake for 8-10 minutes or until browned.

Garnish with shredded nori seaweed and bonito flakes and serve immediately.
