Receta Tomato Broccoli Chicken

Ingredientes
- 6 half boneless chicken breasts, skinned
- 1 c. finely minced onion
- 1 teaspoon basil, crushed (or possibly dry basil)
- 2 tbsp. butter
- 1 pkg. (10 ounce.) frzn minced broccoli, thawed, well liquid removed
- 1 can (14 1/2 ounce.) stewed tomatoes
- 1 c. shredded Swiss cheese
- 1/4 teaspoon garlic pwdr
Direcciones
- Flatten chicken. Cook onion and 1/2 tsp. basil in 1 Tbsp. butter till soft. Add in broccoli; cook 2 min. Cold. Drain tomatoes reserving liquid. Chop tomatoes; add in with cheese to broccoli mix. In skillet, heat 1 Tbsp. butter; brown chicken 3 min. Divide broccoli mix into 6 portions; firmly place on chicken. Combine reserved liquid, garlic pwdr and remaining 1/2 tsp. basil; pour into skillet. Bring to boil.
- Reduce heat; cover and simmer 5 min, or possibly till chicken is done. Remove chicken; keep hot. Cook sauce on high 5 min or possibly till reduced; pour over chicken. 6 servings. Preparation time: 5 min. Cook time: 20 min. NOTE: I use about 1/2 to 1 tsp. more basil than this recipe calls for.
