,%20I%20was%20only%20cooking%20a%201.75%20lb%20pork%20loin%20roast.%20But%20it%20still%20seemed%20large,%20and%20therefore%20somewhat%20of%20a%20challenge.%20And%20I%20still%20wouldn't%20say%20I%20know%20how%20to%20cook%20a%20pork%20loin%20roast%20perfectly%20every%20time.%20The%20length%20of%20time%20to%20cook%20certain%20meats%20can%20vary%20depending%20on%20how%20big%20the%20meat%20is.%20So%20I%20like%20to%20use%20the%20times%20on%20the%20original%20recipe%20as%20guidelines,%20as%20well%20as%20compare%20to%20other%20pork%20loin%20roast%20recipes%20on%20the%20web,%20with%20a%20side%20of%20my%20own%20judgment.%20Because,%20like%20I%20said,%20I%20would%20hate%20hate%20hate%20to%20overcook%20such%20a%20large,%20nice%20piece%20of%20meat.%20While%20this%20roast%20wasn't%20perfect,%20it%20was%20decent...%20I'm%20not%20rushing%20to%20make%20it%20again%20though.%20I%20want%20to%20keep%20practicing%20with%20different%20recipes%20and%20one%20day%20cook%20a%20pork%20roast%20to%20the%20perfect%20tenderness%20and%20juiciness.%20But%20at%20least%20I%20got%20my%20first%20try%20out%20of%20the%20way!%3C/p%3E%3Cp%3ETomato%20Garlic%20Pork%20Loin%20Roast%3C/p%3E%3Cp%3Eadapted%20from%20Living%20the%20Gourmet%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EPlace%20the%20garlic,%20parsley,%20tomatoes,%20olive%20oil,%20and%20pepper%20in%20a%20food%20processor%20and%20pulse%20a%20few%20times%20to%20chop.%3C/p%3E%3Cp%3EPlace%20the%20pork%20in%20a%20baking%20pan%20and%20top%20with%20the%20chopped%20tomato%20mixture.%20Add%201/4%20cup%20chicken%20broth%20to%20the%20pan%20with%20the%20bay%20leaf%20and%20roast%20in%20the%20oven.%20Add%20more%20broth%20to%20the%20pan,%20basting%20pork,%20if%20desired.%3C/p%3E%3Cp%3EBake%20about%2025-30%20minutes%20per%20pound,%20or%20until%20temperature%20reaches%20about%20145-150%20degrees.%20Let%20rest%20for%2015%20minutes,%20as%20pork%20will%20continue%20to%20cook%20to%20about%20155-160%20degrees.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20we%20served%20this%20with%20some%20red%20potatoes.%20I%20think%20I%20would%20have%20preferred%20it%20with%20a%20brown%20coating%20from%20a%20quick%20sear.%20But%20I%20did%20skim%20over%20a%20few%20different%20pork%20loin%20recipes%20and%20none%20of%20them%20said%20to%20sear%20it%20first,%20so%20obviously%20I%20don't%20know%20what%20I'm%20talking%20about%20:)%20Everything%20about%20the%20coating%20sounds%20appealing...%20tomatoes,%20garlic,%20and%20herbs,%20so%20why%20didn't%20I%20like%20it%20as%20much%20as%20I%20feel%20I%20should%20have?%20Maybe%20it%20was%20the%20quality%20of%20the%20pork%20loin%20roast%20we%20bought.%20Or%20maybe%20the%20cooking%20time%20was%20off?%20Is%2025-30%20minutes%20per%20pound%20accurate?%20I'm%20not%20sure%20really.%20But%20I'm%20hopeful%20and%20will%20check%20out%20other%20pork%20loin%20roast%20recipes%20to%20see%20if%20those%20are%20more%20to%20my%20likings.%3C/p%3E%3Cp%3EDoes%20anybody%20have%20any%20delicious%20pork%20loin%20roast%20recipes%20to%20share?%20How%20do%20you%20feel%20about%20pork%20roasts?%3C/p%3E%3Cp%3EPeace,%20and%20bacon%20grease!%3C/p%3E){kind=link}
