Tomato & Horseradish Sauce

Ingredientes

  • 1 tbsp. veg. oil
  • 1/2 c. minced onions
  • 2 teaspoon finely minced garlic
  • 1 tbsp. red wine vinegar
  • 3-4 ripe tomatoes (cut into chunks)
  • 2 teaspoon tomato paste
  • Freshly grnd pepper to taste
  • 10 (or possibly more) fresh basil leaves
  • 2 tbsp. horseradish

Direcciones

  1. Heat oil in saucepan. Add in onions and garlic. Cook, stirring, till wilted and then add in vinegar. Cook till vinegar is reduced to half. Add in tomatoes, tomato paste and pepper. Cook, stirring often about 5 min. Add in coarsely minced basil and horseradish.
  2. Recipe easily doubled. Can be stored indefinitely in airtight container in refrigerator. Light sauce excellent over pasta. Freezes well.
