Tomato, Potato And Avocado Table Salsa

Ingredientes

  • 1 x white or possibly red rose or possibly other boiling potato quartered
  • 2 x ripe hard avocados
  • 4 x plum tomatoes seeded, diced
  • 1 x white onion minced
  • 3 x serrano peppers - (to 6) stemmed, minced
  • 1/4 c. minced cilantro leaves
  • 1 tsp coarse salt
  •     Freshly-grnd black pepper 6 grinds
  •     Juice of 1 lime

Direcciones

  1. Boil potato in small saucepan till tender, about 15 min. Drain and cold potato, then peel and cut into 1/4-inch dice. Place in medium bowl.
  2. Peel and dice avocados into 1/4-inch dice and add in to bowl. Add in tomatoes, onion, peppers, cilantro, salt, pepper and lime juice and mix gently. Taste and adjust seasoning.
  3. Serve at room temperature or possibly slightly cold.
