%20as%20your%20basis%20for%20sauce%20from%20canned%20tomatoes%20and%20you%20can%E2%80%99t%20go%20wrong.%20%20I%20used%20all%20the%20optional%20ingredients%20but%20the%20mushrooms%20when%20I%20took%20the%20pictures%20for%20this%20post.%20%20But%20the%20last%20time%20I%20made%20it,%20I%20used%20all%20but%20no%20bell%20pepper.%20%20And,%20my%20first%20version%20had%20no%20meat%20and%20no%20mushrooms.%20Each%20was%20super.%20Just%20have%20fun%20with%20this%20one!%3C/p%3E%3Cp%3ENote:%20if%20using%20sausage%20or%20another%20sort%20of%20meat,%20be%20sure%20to%20brown%20it%20in%20the%20same%20pot%20you%20are%20using%20to%20saute%20the%20veggies%20and%20simmer%20the%20sauce.%20%20You%20don%E2%80%99t%20want%20to%20lose%20any%20flavors.%3C/p%3E%3Cp%3EAll-purpose%20tomato%20sauce%3C/p%3E%3Cp%3EBased%20on%20a%20recipe%20by%20Mark%20Bittman%3C/p%3E%3Cp%3Ehttp://today.msnbc.msn.com/id/29633150/%3C/p%3E%3Cp%3EFrom%20the%20plants%20that%20wintered%20over%20in%20our%20bedroom.%20Still%20going%20strong%20in%20March!%3C/p%3E%3Cp%3EHere%20is%20my%20version:%3C/p%3E%3Cp%3EJust%20one%20of%20my%20%22bunch%20of%20ingredients%22%20shots.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIf%20using%20sausage,%20heat%20the%202%20T%20olive%20oil%20in%20pot%20over%20medium%20heat,%20add%20the%20sausages,%20and%20brown%20each%20side,%20about%208%20minutes%20total.%20%20Remove%20from%20pan,%20set%20aside,%20and%20cut%20into%20pieces%20before%20adding%20back%20to%20the%20sauce.%3C/p%3E%3Cp%3EBrown%20the%20sausages%20at%20least%204%20minutes%20per%20side.%3C/p%3E%3Cp%3EPut%20the%201/4%20%20olive%20oil%20in%20the%20%20pot%20over%20medium%20heat.%3C/p%3E%3Cp%3EAdd%20the%201/4%20olive%20oil%20to%20the%20leftover%20fat%20and%20brown%20bits%20from%20the%20meat,%20if%20using.%3C/p%3E%3Cp%3EWhen%20the%20oil%20is%20hot,%20add%20the%20onions,%20sprinkle%20with%20salt%20and%20pepper,%20and%20cook,%20stirring%20occasionally,%20until%20soft,%20about%203%20minutes.%3C/p%3E%3Cp%3EThen%20add%20garlic%20and,%20if%20using,%20chili%20salsa%20peppers,%20bell%20pepper,%20and/or%20mushrooms%20and%20cook%20for%20another%20few%20minutes.%3C/p%3E%3Cp%3EAll%20the%20veggies%20-%20no%20mushrooms%20in%20this%20round.%3C/p%3E%3Cp%3ENext,%20slice%20and%20add%20the%20browned%20sausages%20or%20other%20meat,%20if%20using,%20the%20tomatoes,%20and%20as%20much%20liquid%20as%20you%20would%20like%20depending%20on%20desired%20thickness%20and%20how%20long%20you%20have%20to%20simmer%20the%20sauce.%3C/p%3E%3Cp%3ENext%20-%20the%20sausage,%20or%20other%20meat,%20if%20using%3C/p%3E%3Cp%3EAdd%20sugar%20and%20dried%20herbs%20and%20cook,%20stirring%20occasionally,%20until%20the%20tomatoes%20break%20down%20and%20the%20mixture%20comes%20together%20and%20thickens.%20%20The%20longer,%20the%20deeper%20the%20flavor!%20%20Although,%20it%20still%20tasted%20great%20with%20a%20shorter%20simmer.%20But,%20be%20sure%20to%20taste%20for%20spiciness%20as%20you%20simmer%20if%20using%20the%20fresh%20hot%20peppers%20and%20remove%20if%20the%20fire%20gets%20more%20than%20you%20like.%3C/p%3E%3Cp%3Estarting%20to%20simmer%3C/p%3E%3Cp%3EOnce%20it%20is%20at%20the%20thickness%20you%20want,%20taste,%20adjust%20the%20seasonings,%20stir%20in%20any%20fresh%20herbs,%20and%20keep%20warm.%20(Or%20let%20cool,%20cover,%20and%20refrigerate%20for%20up%20to%20several%20days;%20reheat%20gently%20before%20serving.)%3C/p%3E%3Cp%3EClose%20to%20being%20done%20-%20time%20to%20take%20out%20the%20salsa%20chili%20pepper!%3C/p%3E%3Cp%3EI%20am%20so%20pleased%20with%20this%20recipe.%20%20Never%20mind%20the%20vibrant%20taste%20with%20no%20extra%20sodium,%20etc.,%20it%20makes%20more%20the%20the%2024-26%20oz%20that%20comes%20in%20most%20jars%20of%20sauce.%20%20I%20am%20sorry,%2026%20oz%20is%20just%20NOT%20enough%20if%20you%20want%20more%20than%20a%20smidgen%20of%20leftovers!%3C/p%3E%3Cp%3EOh,%20I%20need%20to%20include%20an%20apology,%20here.%20%20I%20recently%20used%20this%20recipe%20for%20a%20church%20potluck%20.%20%20I%20was%20careful%20to%20chop%20only%20one%20hot%20pepper%20and%20then%20put%20only%20one%20whole%20not%20pepper%20to%20simmer%20in%20the%20sauce%20for%20a%20while.%20%20I%20kept%20checking%20the%20level%20of%20heat%20while%20simmering%20and%20took%20out%20what%20I%20thought%20was%20the%20ENTIRE%20hot%20pepper%20almost%20two%20hours%20before%20serving%20time%E2%80%A6Unfortunately,%20the%20pepper%20had%20split%20and%20I%20had%20taken%20out%20only%20HALF%20of%20that%20pepper%20when%20I%20deemed%20the%20sauce%20flavorful%20but%20safe%20for%20a%20potluck%E2%80%A6%20%20Church%20and%20cooking%20friend%20Marjorie,%20whom%20I%20told%20about%20my%20error,%20did%20report%20that%20it%20was%20hot,%20but%20I%20didn%E2%80%99t%20see%20anyone%20in%20active%20distress%20%E2%80%93%20I%20am%20hoping%20everyone%20who%20tried%20it%20liked%20it%20hot!%3C/p%3E%3Cp%3EBut,%20next%20time,%20the%20hot%20peppers%20will%20go%20in%20cheesecloth%20for%20easy%20and%20complete%20retrieval!%3C/p%3E){kind=link}
