.%20When%20the%20Christian%20Crusades%20began%20in%201096,%20Italian%20soldiers%20moved%20into%20Muslim-controlled%20regions%20and%20brought%20back%20with%20them%20the%20secrets%20of%20Arabian%20fare.%20Italian%20princess%20Caterina%20de'Medici%20is%20known%20to%20have%20brought%20Italian%20cuisine%20to%20France%20via%20her%20Florentine%20chefs;%20in%20turn,%20she%20brought%20French%20food%20back%20to%20Italy.%20By%20the%2014th%20century,%20Venice%20had%20control%20of%20the%20Eastern%20Mediterranean%20and%20was%20the%20center%20of%20maritime%20commerce,%20bringing%20in%20foodstuffs%20from%20the%20East%20and%20South.%3C/p%3E%3Cp%3ESo%20you%20see,%20Italy%20has%20a%20centuries%20old%20culinary%20history%20that%20spans%20continents!%20There%20can%20be%20no%20minimizing%20the%20influence%20of%20the%20Middle%20East.%20My%20Nonna%20loved%20using%20herbs%20and%20spices%20in%20unique%20ways%20and%20passed%20that%20along%20to%20me.%3C/p%3E%3Cp%3EToday%20I%20wanted%20to%20clear%20out%20the%20fridge%20a%20bit%20more.%20I%20had%20roasted%20tomatoes%20left%20from%20yesterday%20and%20roasted%20the%20head%20of%20garlic%20while%20I%20did%20some%20housework%20this%20morning.%20The%20following%20soup%20can%20be%20thrown%20together%20in%20literally%20minutes%20thanks%20to%20the%20use%20of%20a%20food%20processor.%20I%20got%20the%20original%20recipe%20many%20years%20ago%20from%20one%20of%20my%20aunt's%20cookbooks%20in%20Italy%20and%20translated%20it.%20Over%20the%20years%20it's%20been%20tweaked%20very%20little,%20but%20I%20do%20tend%20to%20throw%20in%20whatever%20herbs%20I%20have%20on%20hand.%20The%20madeleines%20are%20made%20from%20a%20corn%20timbale%20recipe%20I%20got%20from%20a%20magazine%20years%20ago.%20It's%20a%20basic%20custardy%20timbale%20recipe%20and%20%20can%20be%20made%20in%20small%20ramekins-%20increase%20the%20baking%20time%20a%20little%20bit.%20I've%20frequently%20served%20this%20as%20a%20first%20course%20at%20a%20summer%20luncheon%20and%20so%20years%20back%20started%20using%20the%20madeleine%20mold%20for%20the%20purposes%20of%20a%20pretty%20presentation.%20The%20soup%20can%20be%20served%20cold,%20room%20temperature%20(my%20preference%20during%20the%20summer%20months)%20or%20warmed.%20Make%20sure%20you%20taste%20prior%20to%20serving%20as%20tomatoes%20can%20vary%20in%20their%20flavor%20intensity%20and%20you%20should%20taste%20the%20various%20flavors-%20remember,%20a%20soup%20served%20cold%20especially%20needs%20to%20be%20seasoned%20well.%3C/p%3E%3Cp%3EVegetable%20Spray%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20degrees.%20In%20a%20medium-sized%20pot,%20add%20the%20corn,%20garlic,%20cream%20and%20nutmeg.%20Slowly%20bring%20to%20a%20boil%20and%20simmer,%20partially%20covered,%20%20for%20about%2020%20minutes.%20Cool%20quickly-%20an%20ice%20water%20bath%20works%20well%20or%20refrigerate.%20Blend%20together%20the%20eggs,%20salt%20and%20pepper,%20strain%20cooled%20corn%20mixture%20through%20a%20wire%20strainer%20into%20the%20eggs-%20press%20down%20hard%20to%20extract%20all%20the%20liquid.%20Whisk%20the%20custard%20and%20discard%20the%20solids.%20Spray%2012,%20madeleine%20molds%20(you%20may%20only%20use%2010%20or%2011)%20with%20the%20vegetable%20spray.%20Place%20the%20mold%20in%20a%20baking%20dish,%20pour%20the%20corn%20mixture%20into%20the%20madeleines%20and%20place%20in%20the%20oven.%20Next,%20pour%20hot%20water%20into%20the%20baking%20dish.%20The%20water%20should%20come%20up%20the%20mold%20about%20%C2%BD%20in%20and%20touch%20the%20bottoms.%20Cover%20with%20foil%20and%20bake%20for%2075%20minutes.%3C/p%3E%3Cp%3EWhisk%20the%20chilled%20soup%20and%20pour%20some%20into%20soup%20bowl,%20remove%20the%20mold%20from%20the%20baking%20dish%20and%20gently%20turn%20out%20the%20corn%20madeleines%20onto%20a%20platter.%20Place%20one%20into%20the%20center%20of%20the%20soup.%20Garnish%20with%20chopped%20herbs%20if%20desired.%3C/p%3E%3Cp%3EToday%20is%20also%20a%20VERY%20special%20day%20for%20our%20family%20for%20another%20reason.%3C/p%3E%3Cp%3EOur%20little%20Princess%3C/p%3E%3Cp%3EThe%20light%20of%20our%20lives...%3C/p%3E%3Cp%3Eis%205%20!!!!!%3C/p%3E%3Cp%3EHappy%20Birthday%20Dylan!!%3C/p%3E%3Cp%3EGrandma%20and%20Grandpa%20love%20you%20SO%20much!!%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
