,%20the%20last%20few%20heart-breakingly%20crisp%20little%20cukes%20from%20our%20quickly%20withering%20vines...%3C/p%3E%3Cp%3EThe%20tarts%20were%20inspired%20by%20one%20that%20our%20friend,%20Kali,%20made%20for%20us%20this%20summer.%20The%20original%20recipe,%20which%20is%20much%20simpler%20than%20the%20one%20below%20-%20just%20pastry,%20tomatoes,%20thyme,%20olive%20oil,%20salt%20and%20pepper,%20is%20from%20Canal%20House%20Cooking%20Volume%20No.%204:%20Farm%20Markets%20&%20Gardens%20-%20a%20delicious%20set%20of%20cookbooks.%3C/p%3E%3Cp%3EWhile%20the%20Canal%20House%20tart%20was%20delightful,%20I%20had%20a%20hankering%20for%20something%20a%20tad%20more%20substantial%20and%20less%20appetizer-like%20today.%3C/p%3E%3Cp%3EI%20also%20had%20a%20big%20hunk%20of%20gruy%C3%A8re%20cheese%20that%20was%20not%20getting%20any%20younger%20and%20a%20simple%20chevre%20that%20I%20had%20no%20other%20plans%20for.%20And%20since%20the%20package%20of%20puff%20pastry%20I'd%20bought%20came%20with%20two%20sheets,%20I%20thought,%20%22why%20not%20try%20this%20tart%20two%20ways?%22%20So%20I%20made%20one%20with%20the%20goat%20cheese%20and%20one%20with%20the%20gruy%C3%A8re.%20But%20that%20is%20where%20the%20differences%20end,%20otherwise,%20they%20were%20identical.%3C/p%3E%3Cp%3EIt's%20important%20to%20use%20only%20the%20best%20tomatoes%20--%20you%20want%20something%20really%20sweet%20and%20rich%20for%20this%20since%20the%20flavor%20will%20be%20first%20and%20foremost.%3C/p%3E%3Cp%3EThankfully,%20our%20thyme%20plant%20is%20not%20bothered%20by%20the%20end%20of%20summer%20(unlike%20me)%20and%20was%20happy%20to%20oblige%20with%20a%20few%20tender%20stems.%3C/p%3E%3Cp%3EI%20am%20a%20huge%20fan%20of%20caramelized%20onions%20(though%20to%20be%20honest%20these%20were%20not%20truly%20caramelized,%20just%20saut%C3%A9ed%20with%20salt,%20pepper%20and%20a%20splash%20of%20balsamic%20vinegar)%20so%20I%20thought%20some%20alliums%20would%20make%20a%20nice%20addition,%20too.%3C/p%3E%3Cp%3EThe%20resulting%20tarts%20were%20mighty%20toothsome.%20I%20loved%20the%20addition%20of%20the%20cheese%20and%20the%20sweet%20onions.%20My%20only%20regret%20was%20that%20I%20had%20not%20thought%20to%20scatter%20some%20pinenuts%20on%20them%20(so%20I've%20added%20that%20in%20the%20recipe%20below).%3C/p%3E%3Cp%3EMy%20husband%20and%20I%20were%20divided%20in%20our%20opinions%20-%20I%20thought%20the%20goat%20cheese%20version%20was%20tastier%20while%20he%20favored%20the%20gruy%C3%A8re.%20It's%20a%20fortunate%20difference%20of%20opinion%20since%20we%20each%20have%20our%20eyes%20on%20the%20leftovers%20of%20our%20respective%20favorites...%3C/p%3E%3Cp%3EEither%20way,%20this%20tart%20is%20easy%20and%20scrumptious.%20The%20puff%20pastry%20makes%20it%20look%20and%20taste%20decadent%20with%20extremely%20minimal%20work%20on%20your%20part.%20Effortless%20gourmet...%3C/p%3E%3Cp%3ETomato%20Tart%3C/p%3E%3Cp%3EMakes%20one%20tart%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20375%20degrees%20F.%20While%20you're%20waiting%20for%20the%20pastry%20to%20defrost,%20saut%C3%A9e%20the%20onions%20in%20a%20frying%20pan%20in%20olive%20oil%20until%20translucent.%20Splash%20with%20a%20little%20balsamic%20vinegar%20and%20continue%20to%20cook%20another%201-2%20minutes.%3C/p%3E%3Cp%3E2.%20Lay%20the%20sheet%20of%20puff%20pastry%20out%20on%20a%20parchment%20paper-lined%20baking%20sheet.%20Prick%20the%20dough%20inside%20the%20border%20all%20over%20with%20the%20tines%20of%20a%20fork%20to%20prevent%20it%20from%20puffing%20up%20too%20much%20during%20baking.%3C/p%3E%3Cp%3E3.%20Spread%20a%20layer%20of%20whichever%20cheese%20you%20choose%20on%20the%20pastry.%20Top%20with%20the%20onions,%20then%20arrange%20the%20tomatoes%20on%20the%20pastry%20in%20a%20single%20layer%20(crowding%20or%20overlapping%20the%20tomatoes%20will%20make%20the%20puff%20pastry%20soggy).%20Strip%20the%20branches%20of%20thyme,%20scattering%20the%20leaves%20over%20the%20tomatoes.%20Drizzle%20the%20tart%20with%20some%20olive%20oil%20and%20season%20with%20pepper.%20If%20using%20gruy%C3%A8re,%20reserve%20a%20little%20cheese%20to%20sprinkle%20over%20the%20top.%3C/p%3E%3Cp%3E4.%20Bake%20the%20tart%20until%20the%20pastry%20is%20crisp%20and%20deeply%20browned%20on%20the%20bottom%20and%20around%20the%20edges,%2030-40%20minutes.%20Season%20with%20salt%20and%20serve.%3C/p%3E%3Cp%3EServes%204-6%20as%20an%20appetizer%20or%202-3%20as%20a%20main%20course%3C/p%3E){kind=link}
