Ingredientes

  • 1 lg. yam, cut up
  • 3 sm. leeks, washed & thinly sliced
  • 2 tbsp. butter
  • 2 (10 1/2 ounce.) cans chicken broth
  • 2 lg. tomatoes, sliced or possibly 1 can stewed tomatoes
  • 1/2 teaspoon salt (I omit)
  • 1/4 teaspoon basil (dry)

Direcciones

  1. Saute/fry leeks.
  2. Add in all remaining ingredients. Bring to a boil; reduce heat and simmer about 20 min.
  3. Puree.
  4. Return to heat. Heat and serve. Preparation time: 30-45 min.
