%20but%20since%20they%20were%20already%20nice%20and%20ripe%20they%20had%20them%20on%20%22clearance%22.%20I%20was%20able%20to%20find%20a%20bunch%20that%20wasn't%20over-ripe%20and%20since%20I%20was%20going%20to%20use%20them%20right%20away%20anyways%20I%20was%20happy%20to%20buy%20them%20ripe%20and%20ready%20to%20use.%3C/p%3E%3Cp%3EOne%20of%20my%20favorite%20meals%20in%20summer%20time%20is%20tomato%20salads.%20There%20is%20nothing%20so%20simple%20and%20perfect%20but%20dependent%20on%20the%20ingredients.%20Tomatoes%20are%20something%20that%20still%20really%20only%20taste%20right%20in%20the%20summer.%20One%20bite%20of%20a%20fresh%20summer%20tomato%20is%20enough%20to%20make%20me%20want%20to%20swear%20off%20all%20of%20the%20super%20market%20varieties%20that%20range%20from%20acceptable%20to%20almost%20orange%20and%20mealy!%20But%20unfortunately,%20winter%20will%20be%20back%20soon%20enough%20and%20there%20will%20be%208%20months%20worth%20of%20salads%20that%20rely%20on%20these%20sad%20tomato%20like%20substances!%3C/p%3E%3Cp%3EThe%20first%20variation%20is%20a%20traditional%20Italian%20tomato%20salad.%20This%20is%20an%20easy%20side%20that%20is%20welcome%20at%20my%20dinner%20table%20any%20night.%20It%20is%20best%20when%20you%20make%20it%20in%20advance%20and%20give%20it%20some%20time%20in%20the%20fridge%20to%20meld%20together.%20This%20is%20a%20simple%20mix%20of%20diced%20tomatoes,%20garlic,%20olive%20oil,%20fresh%20basil%20and%20some%20salt%20and%20pepper.%20If%20you%20want%20to%20turn%20it%20up%20a%20little%20a%20splash%20of%20balsamic%20can%20also%20be%20added.%20Or%20some%20fresh%20mozzarella%20to%20turn%20it%20into%20a%20Caprese%20Salad.%3C/p%3E%3Cp%3EThe%20second%20is%20more%20of%20a%20chunky%20salsa%20using%20the%20fresh%20flavors%20of%20Mexican%20cooking.%20For%20this%20version,%20I%20rough%20chopped%20the%20tomatoes%20with%20some%20red%20onion,%20green%20bell%20pepper,%20garlic,%20lime,%20cilantro%20and%20of%20course%20olive%20oil,%20%20salt%20and%20pepper.%20These%20flavors%20are%20naturals%20with%20the%20sweet%20ripe%20tomato%20and%20the%20addition%20of%20some%20hot%20peppers%20(I%20used%20a%20jalapeno%20and%20a%20cherry%20bomb)%20kicks%20this%20up%20to%20another%20level.%20Make%20sure%20you%20are%20careful%20with%20the%20hot%20peppers%20though%20and%20use%20caution%20when%20chopping%20and%20with%20your%20hands%20after%20as%20the%20oil%20from%20the%20peppers%20can%20remain%20on%20hands%20for%20some%20time.%3C/p%3E){kind=link}
