%3C/p%3E%3Cp%3EBack%20to%20the%20topic%20at%20hand.%20Every%20season%20of%20Top%20Chef%20has%20outdone%20the%20last.%20After%20Top%20Chef:%20Vegas%20I'm%20not%20sure%20how%20it%20could%20get%20any%20better.%3C/p%3E%3Cp%3EThe%20talent%20on%20the%20show%20was%20incredible.%20The%20food%20produced%20was%20both%20beautiful%20and,%20more%20importantly,%20yummy.%3C/p%3E%3Cp%3EOr%20at%20least%20I%20think%20it%20was%20yummy.%20I'm%20mostly%20taking%20the%20judges'%20word%20for%20it%20that%20having%20to%20decide%20a%20winning%20dish%20based%20on%20basic%20use%20of%20salt%20and%20pepper%20as%20seasoning%20because%20the%20overall%20taste%20level%20was%20so%20high%20means%20that%20the%20food%20was%20incredibly%20good.%3C/p%3E%3Cp%3EWhy%20didn't%20it%20occur%20to%20me%20until%20now%20to%20actually%20attempt%20to%20cook%20some%20of%20my%20favourite%20dishes%20from%20the%20show?%3C/p%3E%3Cp%3EI'm%20gonna%20go%20with%20the%20old%20stand-by%20and%20say%20that%20my%20general%20lack%20of%20the%20use%20of%20logic%20had%20a%20lot%20to%20do%20with%20it.%3C/p%3E%3Cp%3EBut%20no%20more%20will%20I%20sit%20idly%20by%20and%20drool%20at%20my%20television.%3C/p%3E%3Cp%3EOf%20course,%20that's%20partly%20because%20the%20Top%20Chef%20season%20is%20over%20(and%20I'm%20crying%20inside).%3C/p%3E%3Cp%3ELast%20night%20marked%20my%20first%20experiment%20with%20a%20Top%20Chef%20recipe%20and%20I%20will%20continue%20to%20experiment%20with%20the%20recipes%20once%20a%20week.%3C/p%3E%3Cp%3EI%20think......no,%20once%20a%20week%20it%20is.%3C/p%3E%3Cp%3EI%20think%20I%20have%20a%20commitment%20problem.%3C/p%3E%3Cp%3EI%20started%20with%20Kevin's%20recipe%20from%20the%20second%20last%20episode.%20I%20was%20totally%20in%20love%20with%20the%20dish%20the%20moment%20I%20saw%20it.%20It%20was%20gorgeous%20on%20the%20plate%20and%20a%20beautiful%20showcase%20of%20the%20flavours%20of%20carrot%20and%20beet.%3C/p%3E%3Cp%3ERoasted%20Beets%20and%20Carrots%20with%20Carrot%20Top%20Puree%3C/p%3E%3Cp%3E1%20pound%20Beets%20(I%20used%20the%20local%20golden%20and%20candy-cane%20beets%20I%20had)%201%20lb%20Baby%20carrots%202%20tablespoons%20Butter%20*%202%20tablespoons%20Apple%20Cider%20Syrup%201%20cup%20carrot%20tops%20**%201/3%20cup%20green%20onion%20(green%20parts%20only)%201/3%20cup%20parsley%201/3%20cup%20tarragon%201Z2%20cup%20honey%202%20cups%20olive%20oil%20***%20Dubliner%20cheese%3C/p%3E%3Cp%3E*%20I%20made%20a%20syrup%20by%20cooking%20down%20apple%20cider%20until%20thick.%3C/p%3E%3Cp%3E**%20The%20original%20recipe%20called%20for%20chives,%20which%20I%20couldn't%20find.%3C/p%3E%3Cp%3E***%20Original%20recipe%20called%20for%20San%20Andre%20cheese%20-%20a%20no%20go%20for%20me.%20As%20a%20note,%20San%20Andre%20is%20apparently%20made%20in%20the%20style%20of%20a%20pecorino%20so%20the%20next%20time%20I%20make%20this,%20I'll%20be%20going%20with%20that%20type%20of%20cheese.%3C/p%3E%3Cp%3EBeets:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%3C/p%3E%3Cp%3ETrim%20ends%20off%20beets%20making%20one%20side%20a%20flat%20surface.%3C/p%3E%3Cp%3EPlace%20beets%20in%20a%20large%20pan%20with%20the%20flat%20side%20down%3C/p%3E%3Cp%3ECover%20the%20bottom%20with%201/8%20inch%20of%20water.%3C/p%3E%3Cp%3ECover%20pan%20with%20foil.%3C/p%3E%3Cp%3ECook%20at%20400%20degrees%20for%2090%20minutes.%3C/p%3E%3Cp%3EWhen%20cooked%20keep%20covered%20with%20foil%20until%20beets%20reach%20room%20temp.%3C/p%3E%3Cp%3EPeel%20carrots%20and%20halve.%3C/p%3E%3Cp%3ECut%20into%20similar%20shapes.%3C/p%3E%3Cp%3EPlace%20carrots%20in%20single%20layer%20in%20deep%20saute%20pan.%3C/p%3E%3Cp%3ECover%20with%20water,%20butter%20and%20apple%20cider%20syrup.%3C/p%3E%3Cp%3ECook%20uncovered%20on%20medium%20high%20heat%20until%20liquid%20is%20absorbed%20and%20carrots%20are%20just%20tender.%3C/p%3E%3Cp%3EIf%20carrots%20are%20not%20tender%20add%20more%20butter,%20water,%20syrup%20and%20cook%20a%20little%20longer.%3C/p%3E%3Cp%3ERemove%20from%20pan%20immediately%20and%20let%20cool.%3C/p%3E%3Cp%3ECombine%20carrot%20tops,%20green%20onion%20(chives),%20parsley%20and%20tarragon%20in%20blender.%3C/p%3E%3Cp%3EAdd%206%20ice%20cubes.%3C/p%3E%3Cp%3EAdd%20enough%20olive%20oil%20to%20cover%203/4%20ingredients.%3C/p%3E%3Cp%3EBlend%20on%20high.%3C/p%3E%3Cp%3EAdd%20water%20if%20mixture%20gets%20too%20thick.%3C/p%3E%3Cp%3ESeason%20with%20s&p.%3C/p%3E%3Cp%3EStrain%20mixture.%3C/p%3E%3Cp%3EPut%20strained%20mixture%20in%20covered%20container%20and%20refrigerate%20until%20ready%20to%20serve.%3C/p%3E%3Cp%3EHoney%20Vinaigrette:%3C/p%3E%3Cp%3EBoil%20honey%20in%20pot.%3C/p%3E%3Cp%3EKeep%20close%20eye%20on%20honey%20to%20observe%20it%20darkening%20by%20stages.%3C/p%3E%3Cp%3EWhen%20it%20has%20darkened%20a%20few%20stages%20add%20apple%20cider%20vinegar.%3C/p%3E%3Cp%3EBring%20to%20boil%3C/p%3E%3Cp%3ESeason%20with%20s&p.%3C/p%3E%3Cp%3EWhisk%20in%201%20cup%20olive%20oil.%3C/p%3E%3Cp%3EPutting%20it%20all%20together%3C/p%3E%3Cp%3EToss%20the%20carrots%20and%20beets%20with%20vinaigrette.%3C/p%3E%3Cp%3ESpoon%20puree%20on%20to%20plate.%3C/p%3E%3Cp%3ETop%20with%20ve
