,%20so%20I'm%20just%20going%20to%20show%20you%20all%20a%20stuffed%20pasta%20dish%20that%20is%20a%20favorite%20of%20mine.%20I%20made%20it%20for%20a%20buffet%20supper%20that%20a%20client%20is%20having%20al%20fresco%20this%20evening.%20(I%20made%20a%20bit%20extra%20for%20home)%20Not%20a%20lot%20of%20pictures%20tonight%20as%20I'm%20headed%20out%20the%20door%20to%20deliver%3C/p%3E%3Cp%3ECapelletti,%20literally%20translated,%20means%20little%20hats.%20Which%20is%20sort%20of%20what%20these%20little%20bundles%20look%20like.%20They%20are%20very%20similar%20to%20tortellini%20but,%20I%20think,%20just%20a%20bit%20more%20rustic%20looking.%3C/p%3E%3Cp%3EToday's%20capelletti%20are%20a%20loose%20adaptation%20of%20a%20recipe%20by%20Lorenza%20De'Medici.%20I%20love%20her%20recipes%20as%20they%20are%20so%20very%20close%20to%20many%20of%20my%20Nonna's.%20These%20have%20a%20lovely%20filling%20of%20prosciutto,%20sausage,%20porcini%20and%20chanterelle%20mushrooms,%20and%20mortadella.%20Because%20the%20filling%20is%20meaty,%20I%20made%20the%20pasta%20with%20semolina%20which%20is%20a%20bit%20sturdier%20and%20has%20a%20slightly%20more%20hearty%20texture.%3C/p%3E%3Cp%3EWhen%20we%20were%20in%20Italy%20for%20the%20summers%20of%20my%20childhood,%20we%20always%20spent%20at%20least%20a%20week%20at%20my%20Zia's%20villa%20in%20the%20mountains.%3C/p%3E%3Cp%3EThere%20was%20a%20local%20taverna%20that%20served%20a%20spectacular%20dish%20of%20stuffed%20pasta%20which%20was%20brought%20to%20the%20table%20in%20a%20large%20braided%20bread%20bowl.%20I%20have%20served%20a%20similar%20dish%20on%20many%20occasions,%20but%20some%20years%20ago%20I%20saw%20a%20chef%20on%20TV%20serving%20a%20seafood%20pasta%20dish%20in%20puff%20pastry-%20lightbulb%20moment!%3C/p%3E%3Cp%3ENow,%20when%20the%20occasion%20is%20a%20luncheon,%20or%20the%20pasta%20will%20be%20served%20as%20a%20%22primo%22,%20I%20serve%20it%20in%20a%20puff%20pastry%20tart.%3C/p%3E%3Cp%3E%22Andiamo%20alla%20Cucina!%22%3C/p%3E%3Cp%3ETortina%20di%20Capelletti%3C/p%3E%3Cp%3EI%20sheet%20frozen%20puff%20pastry,%20thawed%3C/p%3E%3Cp%3Escant%201/2%20lb.%20mortadella%20(the%20piece%20I%20used%20was%20.45%20lb.)%3C/p%3E%3Cp%3Escant%201/2%20lb.%20prosciutto%20(%20the%20piece%20I%20used%20was%20.41%20lb.)%3C/p%3E%3Cp%3E1/4%20lb.%20sausage%20(I%20used%20sweet)%3C/p%3E%3Cp%3E1/4%20cup%20dried%20mushrooms%20(I%20used%20a%20combination%20of%20porcini%20and%20chanterelles),%20soaked%20in%201%20cup%20boiling%20water%20for%2030%20minutes.%20Drain%20into%20a%20wire%20mesh%20strainer%20lined%20with%20a%20coffee%20filter%20and%20squeeze%20well.%20Reserve%20the%20waterfor%20the%20mushroom%20sauce%3C/p%3E%3Cp%3E1%20TBLSP%20juniper%20berries%3C/p%3E%3Cp%3E1-2%20TBLSP%20bread%20crumbs%3C/p%3E%3Cp%3E2%20large%20eggs%3C/p%3E%3Cp%3Egood%20pinch%20of%20nutmeg%3C/p%3E%3Cp%3E3/4%20cup%20grated%20parmesan%20cheese%3C/p%3E%3Cp%3EPasta%20dough%20(I%20used%203%20cups%20flour,%201%20cup%20semolina,%204%20eggs,%20salt,%20and%20a%20small%20amount%20of%20cold%20water)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%3C/p%3E%3Cp%3ERoll%20out%20the%20puff%20pastry%20to%20fit%20into%20a%20tart%20pan%20with%20a%20removeable%20bottom.%20Prick%20bottom%20of%20pastry%20well.%20Line%20with%20parchment%20paper%20and%20pie%20weights.%20Bake%20for%2020%20minutes,%20remove%20pie%20weights%20and%20bake%20for%2020%20minutes%20more%20till%20golden%20brown.%3C/p%3E%3Cp%3EI%20use%20a%20meat%20grinder%20for%20the%20filling,%20but%20it%20can%20probably%20be%20done%20in%20a%20food%20processor-%20Grind%20mortadella,%20prosciutto,%20sausage,%20mushrooms,%20and%20juniper%20berries%20together-%20I%20use%20the%20fine%20blade.%20Mix%20in%20eggs,%20bread%20crumbs,%20nutmeg,%20and%20cheese%20and%20refridgerate%20till%20the%20pasta%20dough%20is%20ready%20to%20be%20filled.%3C/p%3E%3Cp%3ERoll%20pasta%20dough%20out%20in%20strips%20going%20through%20widest%20setting%20once,%20fold%20strip%20in%20half%20and%20go%20through%20same%20setting%20again.%20Continue%20passing%20through%20machine%20making%20settings%20thinner%20with%20each%20pass%20till%20you%20get%20to%20setting%20%235.%20Lay%20out%20the%20strip%20of%20pastry%20and%20drop%20small%20mounds%20of%20the%20filling%20in%20a%20line%20about%20an%20inch%20in%20from%20the%20long%20edge.%20Brush%20long%20edges%20and%20in%20between%20each%20mound%20with%20a%20brush%20dipped%20in%20water.%20Fold%20pastry%20over%20enclosing%20filling.%20Cut%20in%20between%20each%20mound%20and%20press%20all%20edges%20to%20seal.%20Bend%202%20sides%20around%20into%20a%20little%20%22C%22%20shape%20and%20place%20capelletti%20on%20a%20floured%20cookie%20sheet.%20Cover%20and%20refrigerate%20till%20ready%20to%20cook%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20well-%20salted%20water%20to%20a%20boil%20and%20drop%20in%20the%20capelletti.%20Cook%20till%20tender-%20a%20few%20minutes.%20Use%20a%20large%20strainer%20spoon%20to%20remove%20and%20place%20in%20a%20bowl.%20Serve%20with%20your%20favorite%20sauce%20or%20the%20Mushroom%20Mascarpone%20Cream%20sauce%20below%3C/p%3E%3Cp%3ESaute%20garlic%20in%20oil.%20Swirl%20in%20butter,%20add%20mushrooms%20and%20water%20reserved%20from%20capelletti%20filling.%20Cook%20down%20till%20thick,%20stir%20in%20mascarpone%20till%20melted%20then%20cream.%20Warm%20and%20pour%20over%20pasta.%20Serve%20with%20lots%20of%20shaved%20parmesan%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
