Ingredientes

  • 1 med red onion divided
  • 2 med avocados - (12 ounce total) pitted, peeled,
  •     and cut into pcs
  • 1/3 c. mayonnaise
  • 3 Tbsp. fresh lime juice
  • 1 tsp chopped chipotle chile in adobo sauce
  • 1 1/4 tsp salt
  • 1/4 tsp grnd cumin
  • 1 lrg head Romaine lettuce - (1 lb)
  •     (abt 8 packed c.)
  • 1 lrg head iceberg lettuce - (1 1/2 lbs)
  •     (abt 9 packed c.)
  • 12 x radishes trimmed, sliced
  • 3 med tomatoes cut into wedges
  • 1 med cucumber seeded, sliced

Direcciones

  1. Finely chop 2 Tbsp. of the onion; combine with the remaining dressing ingredients in a blender. Process till smooth, stopping to scrape sides as necessary.
  2. Thinly slice the remainder of the onion. Toss with the lettuces, radishes, tomatoes and cucumber. Add in dressing and toss gently to coat.
  3. This recipe yields 10 servings.
  4. Comments: Chipotles en adobo are smoked jalepeno peppers mixed with tomato and spices in tiny cans; they can be found in the Latin food section of most supermarkets.
