%20So%20on%20Christmas%20eve,%20I%20set%20to%20work.%3C/p%3E%3Cp%3EFirst%20up%20was%20the%20Butterscotch%20Marshmallow%20Fudge.%3C/p%3E%3Cp%3EWe%20needed%20to%20crush%20the%20graham%20crackers%20first.%3C/p%3E%3Cp%3EThe%20girls%20had%20fun%20whacking%20the%20ziplock%20bags%20of%20graham%20crackers%20with%20pots.%20:)%20Then%20Abby%20took%20a%20break%20to%20test%20one%20of%20the%20crackers.%3C/p%3E%3Cp%3E%EF%BB%BFIn%20a%20large%20pot%20over%20medium%20heat,%20combine%20a%20stick%20of%20butter,%20evaporated%20milk,%20and%20sugar.%3C/p%3E%3Cp%3EIt%20needed%20to%20be%20stirred%20constantly%20until%20the%20sugar%20was%20dissolved%20but%20my%20Mom%20warned%20not%20to%20let%20it%20get%20too%20hot.%3C/p%3E%3Cp%3EThen%20stir%20in%20the%20bag%20of%20butterscotch%20morsels%20and%20crushed%20graham%20crackers.%20Once%20that%20is%20incorporated,%20stir%20in%20the%20bit%20of%20flour.%3C/p%3E%3Cp%3EAfter%20removing%20it%20from%20heat,%20we%20stirred%20in%20the%20bag%20of%20mini%20marshmallows.%3C/p%3E%3Cp%3EThen%20into%20the%20waiting%20casserole%20dish%20the%20butterscotch%20marshmallow%20mixture%20went.%3C/p%3E%3Cp%3E%EF%BB%BFThen%20that%20goes%20into%20the%20fridge%20until%20it%20sets.%20Cut%20it%20up%20and%20enjoy!%3C/p%3E%3Cp%3EWhile%20the%20Butterscotch%20Marshmallow%20Fudge%20was%20setting%20up,%20I%20got%20started%20on%20making%20my%20Mom's%20Layered%20Peppermint%20Fudge.%20It%20really%20wouldn't%20be%20Christmas%20without%20this%20stuff!%3C/p%3E%3Cp%3EOh,%20you%20gotta%20use%20a%20double-boiler%20for%20this--ya%20like%20mine?%20It's%20a%20little%20sketchy%20but%20it%20gets%20the%20job%20done.%20:)%3C/p%3E%3Cp%3ESo%20into%20the%20double-boiler%20goes%20a%20bag%20of%20semi-sweet%20chocolate%20chips%20and%20about%202/3%20cup%20sweetened%20condensed%20milk.%20Stir%20constantly%20to%20ensure%20even%20melting.%3C/p%3E%3Cp%3EThen%20when%20it%20gets%20all%20smooth%20and%20creamy,%20you%20can%20add%20in%20a%20little%20vanilla%20extract.%3C/p%3E%3Cp%3EHalf%20of%20this%20yummy%20melted%20chocolate%20went%20into%20a%20wax%20paper-lined%20square%20baking%20dish.%20The%20remaining%20chocolate%20was%20set%20aside.%20I%20put%20the%20dish%20in%20the%20freezer%20for%2010%20minutes%20to%20set.%20Now%20it%20was%20time%20to%20melt%20the%20white%20chocolate.%3C/p%3E%3Cp%3ENow,%20my%20mom%20usually%20melts%20the%20white%20chocolate%20in%20the%20double%20boiler,%20but%20I%20didn't%20want%20to%20have%20to%20scrape%20the%20remaining%20chocolate%20out%20of%20the%20pot,%20clean%20it,%20and%20so%20on.%20So%20I%20gave%20the%20microwave%20a%20try%20to%20melt%20the%20white%20chocolate.%20It%20worked%20like%20a%20charm.%20:)%3C/p%3E%3Cp%3EI%20added%20in%20the%20teaspoon%20or%20so%20of%20peppermint%20extract%20and%20two%20drops%20of%20green%20food%20coloring.%20It%20was%20in%20the%20microwave%20for%20a%20total%20of%20about%20one%20minute.%3C/p%3E%3Cp%3EI%20took%20the%20dish%20out%20from%20the%20freezer%20and%20spread%20the%20green%20chocolate%20overtop.%3C/p%3E%3Cp%3EThen%20I%20put%20it%20back%20in%20the%20freezer%20to%20let%20it%20set.%20Meanwhile,%20I%20reheated%20the%20chocolate%20in%20the%20double%20boiler%20taking%20care%20not%20to%20heat%20it%20too%20much.%20It%20then%20went%20over%20the%20green%20chocolate%20in%20an%20even%20layer.%20Then%20into%20the%20fridge%20until%20it%20was%20completely%20hard%20so%20I%20could%20cut%20it%20up.%3C/p%3E%3Cp%3EThe%20layered%20mint%20fudge%20was%20so%20much%20of%20a%20hit%20that%20Nate's%20uncle%20took%20to%20smuggling%20some%20out%20at%20the%20extended%20family's%20Christmas%20get-together.%20:)%3C/p%3E){kind=link}
