%20Even%20during%20my%20last%20India%20trip,%20which%20was%20a%20couple%20of%20years%20ago,%20my%20grandma%20went%20to%20the%20grinding%20mill%20all%20by%20herself%20(she%20was%20around%2080%20years%20at%20that%20time)%20carrying%20a%20big%20bucket%20to%20grind%20chili%20powder%20for%20me.%20She%20made%20sure%20our%20kitchens%20(starting%20from%20my%20mom's%20kitchen%20to%20mine,%20my%20sister's,%20and%20my%20cousins'%20kitchens)%20were%20all%20well%20stocked%20up%20with%20chili%20powders,%20vadagam,%20and%20all%20powders.%20%20Most%20of%20my%20childhood%20memories%20of%20her%20was%20with%20her%20always%20carrying%20a%20cleaning%20device%20and%20sometimes%20chasing%20us%20with%20that%20:)%3C/p%3E%3Cp%3EI%20love%20the%20way%20she%20called%20me%20%22geethama%22.%20I%20miss%20her%20a%20lot%20and%20will%20always%20cherish%20her%20memories%20close%20to%20my%20heart%20hoping%20that%20she%20is%20up%20there%20somewhere%20watching%20us%20all%20with%20love.%20I%20do%20not%20want%20to%20make%20my%20mom%20emotional%20with%20this%20post,%20so%20I%20am%20not%20sharing%20her%20photo%20here%20but%20I%20do%20have%20some%20of%20my%20ayah's%20recipes.%20%20To%20me,%20my%20ayah's%20cooking%20is%20the%20best%20cooking%20in%20the%20world.%20%20I%20love%20the%20aroma%20that%20waffles%20through%20the%20house%20when%20she%20cooks.%20She%20always%20uses%20fennel%20seeds%20or%20fennel%20powder%20in%20everything%20and%20that's%20how%20I%20started%20loving%20fennel.%20%20Even%20a%20simple%20dish,%20which%20is%20cooked%20her%20will%20be%20so%20tasty.%20%20Some%20of%20her%20famous%20dishes%20are%20kadappa,%20vatha%20kuzumbu%20with%20paruppu%20thovayal,%20fish%20kuzumbu,%20fish%20fry%20and%20so%20many%20more.%3C/p%3E%3Cp%3EKADAPPA%3C/p%3E%3Cp%3EThis%20is%20one%20of%20grandma's%20signature%20dishes.%20%20The%20interesting%20variation%20of%20her%20dish%20is%20that%20she%20sometimes%20makes%20this%20with%20channa%20dhal%20instead%20of%20moong%20dhal.%20If%20you%20like%20regular%20kadappa%20with%20moong%20dhal,%20you%20will%20fall%20in%20love%20with%20this%20version.%20Adding%20fresh%20ginger-garlic%20paste%20is%20a%20must%20here%20as%20it%20makes%20a%20huge%20flavor%20difference%20to%20this%20dish.%20This%20is%20typically%20served%20with%20idlis%20and%20dosas%20but%20my%20mom%20usually%20makes%20this%20as%20a%20side%20dish%20for%20chappathis.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1.%20%20Channa%20dhal%20(or)%20moong%20dhal%201/2%20cup.%20This%20dish%20is%20made%20with%20moong%20dhal%20mostly.%3C/p%3E%3Cp%3E2.%20%20Onion,%20medium%20size,%201.%3C/p%3E%3Cp%3E3.%20%20Tomatoes,%20medium%20size,%202.%3C/p%3E%3Cp%3E4.%20%20%20Potatoes,%20large,%201.%3C/p%3E%3Cp%3E5.%20%20Green%20chilies,%202.%3C/p%3E%3Cp%3E6.%20%20Grated%20coconut,%202%20tablespoons.%3C/p%3E%3Cp%3E7.%20%20Garlic,%202%20pods.%3C/p%3E%3Cp%3E8.%20%20Ginger,%20a%20small%20piece.%3C/p%3E%3Cp%3E9.%20%20Turmeric%20powder,%20a%20pinch.%3C/p%3E%3Cp%3E10.%20%20Cinnamon%20sticks,%202.%3C/p%3E%3Cp%3E11.%20Fennel%20seeds,%201%20teaspoon.%3C/p%3E%3Cp%3E12.%20Salt,%20as%20per%20taste.%3C/p%3E%3Cp%3E13.%20Chili%20powder,%201/2%20teaspoon.%3C/p%3E%3Cp%3E14.%20Coriander%20powder,%201%20teaspoon.%3C/p%3E%3Cp%3E15.%20Curry%20leaves,%20a%20sprig.%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ECook%20the%20channa%20dhal%20with%20a%20pinch%20of%20salt%20and%20keep%20it%20aside.%20%20Cook%20the%20potato%20either%20in%20the%20pressure%20cooker%20or%20microwave,%20peel%20the%20skin,%20and%20crumble%20it%20coarsely.%20Grind%20the%20green%20chilies,%20coconut,%20garlic%20and%20ginger%20into%20a%20fine%20paste.%20Dice%20the%20onions%20and%20tomatoes%20into%20small%20pieces.%3C/p%3E%3Cp%3EHeat%20a%20pan%20with%20a%20tablespoon%20of%20oil.%20Once%20the%20oil%20is%20hot,%20add%20the%20cinnamon%20sticks%20and%20fennel%20seeds%20and%20fry%20them%20for%20a%20few%20seconds.%20Then%20add%20the%20diced%20onions%20and%20curry%20leaves%20and%20sautee%20for%20a%20few%20minutes%20until%20the%20onions%20turn%20translucent.%20Then%20add%20the%20tomatoes%20and%20keep%20sauteeing%20until%20everything%20is%20blended.%20Now%20add%20the%20ground%20paste,%20chili%20powder,%20coriander%20powder,%20and%20salt%20and%20keep%20stirring%20under%20low%20flame%20for%202-3%20minutes.%20Add%20the%20cooked%20dhal%20and%20crumbled%20potatoes%20after%202%20minutes,%20mix%20everything%20well%20and%20let%20it%20cook%20for%205%20more%20minutes%20before%20switching%20off%20the%20stove.%20If%20need%201/2%20cup%20of%20water%20can%20be%20added%20if%20the%20kadappa%20is%20too%20thick.%20%20Serve%20hot%20with%20idlis,%20dosas,%20or%20chapathis.%3C/p%3E%3Cp%3EVATHA%20KUZUMBU%3C/p%3E%3Cp%3EThis%20is%20%20a%20classic%20combination.%20This%20does%20not%20need%20any%20other%20side%20dishes.%20Just%20rice,%20vatha%20kuzumbu%20with%20paruppu%20thovayal,%20and%20papads%20is%20such%20a%20tasty%20meal%20all%20by%20itself.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ESmall%20onions,%201%20cup%20(or)%20regular%20onions,%202.%3C/p%3E%3Cp%3ETomatoes,%20medium%20sized,%202
