%20in%20October.%20This%20year%20my%20roommate%20let%20me%20celebrate%20a%20few%20days%20before%20Halloween%20because%20of%20Hurricane%20Sandy%20so%20we%20watched%20The%20Holiday%20with%20the%20wind%20raging%20outside.%20While%20I%E2%80%99m%20cooking%20at%20work%20(private%20chef-ing)%20I%20have%20Christmas%20tunes%20playing%20on%20low%20on%20my%20iPad.%20And%20the%20day%20after%20Thanksgiving%20I%20strapped%20a%206-foot,%20stubby%20tree%20onto%20my%20car%20and%20lugged%20it%20into%20my%20apartment%20where%20it%20was%20decorated%20within%20a%20few%20hours.%3C/p%3E%3Cp%3EThat%20said,%20this%20year%20I%E2%80%99m%20overworked%20and%20exhausted.%20I%E2%80%99m%20struggling%20with%20%E2%80%9Cam%20I%20overworking%20myself%20into%20a%20Lyme%20flare?%E2%80%9D%20and%20%E2%80%9Cwhy%20don%E2%80%99t%20I%20have%20the%20energy%20to%20tackle%20the%20writing%20gigs%20I%20love%20or%20the%20baking%20on%20my%20list%20when%20I%20get%20home%20from%20work%20at%20night?!%E2%80%9D.%3C/p%3E%3Cp%3EThe%20holidays%20are%20awesome.%20But%20yes,%20sometimes,%20they%20wear%20us%20out.%3C/p%3E%3Cp%3EFortunately%20one%20thing%20that%20Lyme%20has%20taught%20me%20is%20to%20just%20let%20go%20of%20certain%20things.%20If%20I%20don%E2%80%99t%20make%20300%20gluten-free%20cookies%20is%20Christmas%20Day%20not%20going%20to%20come?!?!%20No!%20If%20I%20don%E2%80%99t%20blog%20for%20two%20or%20three%20weeks%20is%20the%20entire%20internet%20world%20of%20readers%20going%20to%20put%20me%20on%20a%20black%20list?!%20Ha!%3C/p%3E%3Cp%3ELetting%20go%20of%20certain%20things%20I%20look%20forward%20to%20%E2%80%93%20like%20cookies%20I%E2%80%99ve%20made%20yearly%20in%20December%20and%20blogging%20new%20creations%20that%20I%20adore%20%E2%80%93%20means%20that%20the%20things%20I%20do%20participate%20in%20have%20that%20much%20more%20significance%20and%20give%20me%20that%20extra%20boost%20of%20joy.%3C/p%3E%3Cp%3ELike%20the%20Great%20Food%20Blogger%20Cookie%20Swap.%3C/p%3E%3Cp%3EThis%20year,%20because%20of%20both%20my%20gluten%20and%20dairy%20preferences,%20I%20was%20matched%20with%20only%20one%20blogger;%20Jody%20from%20The%20Hobby%20Room%20Diaries.%20Her%20blog%20is%20stunning;%20%20take%20a%20peek%20and%20you%E2%80%99ll%20be%20as%20blown%20away%20as%20I%20am%20by%20what%20she%20creates.%20I%E2%80%99m%20especially%20psyched%20by%20her%20tutorial%20on%20making%20your%20own%20cake%20stands!%20When%20I%20received%20Jody%E2%80%99s%20package%20I%20was%20so%20excited%20because%20it%20was%20beautiful%20and%20almost%20burst%20into%20tears%20because%20her%20note%20was%20so%20loving%20and%20made%20my%20day.%20Check%20it%20out:%3C/p%3E%3Cp%3EAnd%20then,%20of%20course,%20there%20were%20the%20cookies%20inside!%20Light%20and%20fluffy%20pistachio%20macaroons%20dipped%20in%20dark%20chocolate%20(great%20dairy-free%20minds%20think%20alike).%20I%20picked%20them%20up%20from%20the%20post%20office%20the%20morning%20of%20my%20annual%20holiday%20dinner,%20and%20as%20I%20(so%20smartly)%20decided%20to%20not%20make%20dessert%20and%20have%20guests%20bring%20a%20little%20something%20sweet%20instead,%20having%20these%20come%20was%20a%20huge%20win%20as%20I%20could%20have%20dessert%20too!!!%20Go%20to%20The%20Hobby%20Room%20Diaries%20for%20her%20recipe!%3C/p%3E%3Cp%3ENow,%20I%E2%80%99d%20had%20good%20intentions%20with%20sending%20Jody%20something%20special.%20But%20then%20that%20thing%20happened%E2%80%A6%20my%20recipes%20weren%E2%80%99t%20working.%20Gluten%20and%20dairy-free%20gingerbread%20people%20(which%20I%E2%80%99d%20hoped%20to%20send%20her%20with%20the%20ingredients%20for%20making%20royal%20icing%20so%20her%20boys%20could%20decorate%20them)?%20Dry%20and%20bland-tasting.%20Double%20Cranberry%20Cabernet%20cookies?%20The%20Earth%20Balance%20couldn%E2%80%99t%20hold%20up.%20A%20few%20more%20trials%20were%20done%20too%20late%20at%20night%20and%20I%20was%20starting%20to%20get%20bah-humbugged%20(Jody%20and%20I%20share%20a%20love%20for%20making%20up%20words,%20too).%3C/p%3E%3Cp%3ESo%20I%20took%20a%20deep%20breath%20and%20went%20for%20a%20variation%20of%20a%20classic:%20biscotti.%20My%20mother%20makes%20biscotti%20every%20Christmas%20and%20a%20few%20years%20ago%20made%20me%20a%20gluten%20and%20dairy-free%20version%20as%20well.%20So%20if%20I%20couldn%E2%80%99t%20get%20something%20completely%20new%20together%20for%20Jody,%20I%20was%20going%20to%20send%20her%20a%20reliable%20classic%20that%20make%20me%20feel%20holiday%20love.%3C/p%3E%3Cp%3EI%20adapted%20my%20Chocolate%20Almond%20Biscotti%20recipe%20only%20slightly,%20dipped%20them%20in%20chocolate,%20packaged%20them%20up%20and%20shipped%20them%20out%20on%20the%20last%20possible%20day%20:)%20I%20loved%20participating%20in%20this%20swap%20again,%20and%20now%20am%20excited%20to%20blog-stalk%20the%20heck%20outta%20Jody,%20because%20she%E2%80%99s%20a%20lady%20I%20have%20a%20feeling%20I%20will%20learn%20much%20from%20and%20have%20such%20a%20joy%20following.%3C/p%3E%3Cp%3ESo%20Happy%20Holidays%20to%20Jody,%20and%20to%20the%20Great%20Food%20Blogger%20Cookie%20Swappers,%20and%20to%20those%20of%20you%20who%20happened%20upon%20here%20today.%20There%E2%80%99s%20a%20lot%20of%20love%20coming%20your%20way%20from%20my%20dusty%20kitchen%20right%20now,%20where%20I%E2%80%99m%20looking%20out%20at%20the%20gray%20sky%20over%20NYC%20and%20feeling%20so%20much%20joy.%3C/p%3E%3Cp%3E-%20Jacqueline%3C/p%3E%3Cp%3ETriple%20Chocolate%20Gluten%20and%20Dairy-Free%20Biscotti%3C/p%3E%3Cp%3EMakes%2012-14%20cookies%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%C2%B0.%20Line%20a%20baking%20sheet%20with%20parchment%20or%20Silpat,%20or%20lightly%20grease.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20flours,%20gum,%20baking%20soda,%20baking%20powder%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20mixer%20with%20the%20whisk%20attachment,%20beat%20Earth%20Balance%20and%20sugars%20until%20light%20and%20fluffy,%20about%203%20minutes,%20scraping%20down%20the%20bowl%20occasionally%20(note,%20if%20you%20use%20organic%20sugar,%20as%20I%20do,%20beat%20longer%20as%20the%20larger%20granules%20take%20more%20time%20to%20melt%20or%20cream%20into%20the%20fat).%20%20Add%20eggs%20one%20at%20a%20time,%20beating%20to%20incorporate.%20%20Beat%20in%20vanilla%20and%20chocolate%20extracts.%20%20With%20the%20mixer%20on%20slow,%20add%20flour%20and%20beat%20to%20combine,%20increasing%20speed%20to%20incorporate.%20%20Mix%20in%20chocolate%20chips.%3C/p%3E%3Cp%3EWith%20floured%20hands,%20roll%20into%20a%2012-inch%20log%20and%20place%20on%20prepared%20sheet%20(or%20longer%20if%20you%20want%20smaller%20cookies).%20%20Round%20top%20slightly.%20%20Bake%20for%2035-40%20minutes,%20or%20until%20cracked%20on%20top%20and%20slightly%20firm.%20%20It%20shouldn%E2%80%99t%20be%20cooked%20completely,%20so%20the%20center%20should%20seem%20a%20tad%20underdone.%3C/p%3E%3Cp%3ERemove%20to%20cooling%20rack%20and%20cool%20for%20at%20least%2010%20minutes.%20%20Slice%20into%20into%201/2%20inch%20slices%20and%20gently%20slide%20onto%20cookie%20sheet,%20cut%20side%20down.%20%20They%20will%20be%20a%20bit%20crumbly,%20so%20use%20a%20spatula%20to%20gently%20flip%20them%20on%20the%20sheet.%20%20Bake%20for%20another%2015-20%20minutes%20or%20until%20crisp%20and%20brown.%20%20Cool%20completely.%3C/p%3E%3Cp%3ELine%20a%20cookie%20sheet%20with%20wax%20paper.%20Melt%20the%20remaining%20chocolate%20in%20a%20mug%20in%20the%20microwave%20in%2030%20second%20bursts,%20stirring%20to%20melt%20remaining%20chocolate.%20Dip%20each%20biscotti%20and%20rest%20it%20on%20the%20cookie%20sheet.%20Refrigerate%20for%2010%20minutes%20to%20firm%20up.%20Send%20to%20someone%20AWESOME!%3C/p%3E){kind=link}
