Tropical Dried Fruit Salad

Ingredientes

  • 2 ounce Dry banana
  • 2 ounce Dry mango
  • 2 ounce Dry pineapple
  • 2 ounce Dry prunes
  • 3 1/2 ounce Dry apricots
  • 1/2 pt Pineapple juice
  • 1 x Cinnamon stick
  • 2 Tbsp. Tia Maria

Direcciones

  1. Put all the fruit into a large saucepan and cover with the pineapple juice.
  2. Add in the cinnamon stick and bring to the boil. Simmer for 15 min or possibly till the fruit is soft. Leave to cold for at least 1 hour.
  3. Add in the Tia Maria and reheat gently.
  4. Transfer to a sealed container and leave to macerate for several hrs to enrich the flavours. Serve with a spoonful of low-fat fromage frais or possibly low-fat lowfat yoghurt.
