%3C/p%3E%3Cp%3EIn%20the%20winter,%20I%20often%20make%20this%20vegetarian%20leek-artichoke%20pie%20with%20excellent%20results.%20Today%20I%20was%20craving%20it,%20and%20I%20had%20some%20leeks,%20but%20I%20didn't%20have%20any%20artichoke%20hearts.%20So%20I%20dug%20around%20in%20the%20fridge%20and%20improvised,%20taking%20the%20opportunity%20to%20use%20some%20of%20the%20huge%20gallon%20bag%20of%20turkey%20I%20had%20left%20over%20from%20Thanksgiving%20weekend%20(we%20froze%20most%20of%20it,%20but%20I%20had%20some%20I'd%20thawed%20this%20week).%20The%20result%20-%20even%20better%20than%20the%20original.%3C/p%3E%3Cp%3EAnd%20with%20this%20crust,%20it's%20unbelieveably%20simple.%20You%20don't%20even%20have%20to%20roll%20the%20crust%20out%20or%20dirty%20up%20a%20bowl!%20It%20really%20is%20%22easy%20as%20pie.%22%20Make%20it%20gluten-free%20with%20brown%20rice%20flour%20instead%20of%20wheat,%20if%20that's%20your%20thing.%3C/p%3E%3Cp%3ETo%20make%20it%20vegetarian,%20just%20leave%20out%20the%20turkey%20and%20throw%20in%20another%20cup%20of%20veggies%20-%20artichoke%20hearts%20are%20great,%20obviously,%20but%20so%20are%20potatoes%20or%20even%20beans.%20You%20could%20throw%20in%20some%20chunks%20of%20frozen%20tofu%20as%20well,%20and%20I%20was%20just%20thinking%20how%20good%20pine%20nuts%20would%20be.%20If%20you%20want%20to%20leave%20the%20egg%20out,%20just%20increase%20the%20milk%20to%20a%20full%20cup.%20This%20is%20a%20very%20flexible%20dish!%20And%20soooo%20comfort-foody.%20Just%20serve%20it%20with%20a%20salad%20for%20a%20delectable%20dinner.%3C/p%3E%3Cp%3ETURKEY%20(OR%20VEGGIE)%20LEEK%20PIE%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20big%20saucepan%20or%20wok%20over%20medium-high%20heat,%20and%20add%20the%20garlic.%20Saute%20for%20a%20minute%20or%20two,%20then%20add%20the%20leeks,%20kale,%20and%20turnip.%20Stirring%20occasionally,%20cook%20until%20the%20leeks%20and%20kale%20begin%20to%20wilt.%20Season%20with%20salt,%20pepper,%20nutmeg,%20and%20thyme%20if%20using.%20Add%20turkey%20and%20cook%20another%20minute%20or%20two%20more.%3C/p%3E%3Cp%3EWhisk%20the%20egg%20into%20the%20milk,%20then%20add%20the%20flour%20and%20whisk%20to%20blend.%20Pour%20into%20the%20pot%20with%20the%20veggies%20and%20turkey,%20and%20stir%20for%20a%20minute%20until%20warm%20throughout.%20Take%20it%20off%20the%20heat.%3C/p%3E%3Cp%3ESpread%20all%20but%201%20Tbsp%20of%20the%20gorgonzola%20into%20the%20bottom%20of%20the%20pie%20crust.%20Pour%20the%20veggie%20mixture%20on%20top%20and%20smooth%20it%20out%20evenly.%20Sprinkle%20the%20remaining%201%20Tbsp%20gorgonzola%20crumbs%20on%20top%20and%20bake%20for%2030-40%20minutes%20or%20until%20set%20firm.%20Let%20stand%20at%20least%205-10%20minutes%20before%20serving.%3C/p%3E%3Cp%3ENote:%20If%20you're%20pressed%20for%20time%20after%20work,%20you%20can%20make%20the%20filling%20and%20crust%20a%20day%20ahead%20and%20refrigerate%20them%20separately;%20then%20just%20dump%20in%20the%20filling%20and%20cheese%20and%20throw%20it%20in%20the%20oven%20when%20you're%20ready.%3C/p%3E){kind=link}
