Turkey Stock
I’m posting this early enough in the month so that you will have time to collect and freeze all of the leftover veggies, and no it’s not a urine sample! While you’re doing all of your prep for Thanksgiving, cut up and store all of your leftover veggies in a plastic bag in the freezer, then when it comes time to make stock, you won’t have to buy and use your fresh veggies…
INGREDIENTS:
- 1 turkey carcass
- 1 turkey neck
- 6 large garlic cloves-smashed
- 2 onions-quartered
- 3 carrots-chopped in thirds
- 4 stalks celery-chopped in thirds
- 1 tablespoon salt
- 2 tablespoons black peppercorns
- 5 fresh sage leaves
DIRECTIONS:
Add all ingredients to a large stock pot and cover with water. Bring to a boil, then cover and simmer for 3-4 hours, the longer the better. Remove the turkey parts, then strain the broth through a fine sieve (you can also use cheesecloth if you have it). Let sit to cool, then skim the fat off the top. Use immediately or pour into plastic containers and freeze up to 3 months.
