Turnip Greens With Cornmeal Dumplings

Ingredientes

  • 2 lbs. fresh turnip greens or possibly mustard
  • Water
  • 1/4 pound salt pork, ham, bacon, minced
  • Salt to taste
  • 3/4 c. self-rising cornmeal
  • 1 egg, beaten
  • 1/4 c. lowfat milk
  • 1 tbsp. melted shortening

Direcciones

  1. Wash greens thoroughly. Cover with cool salted water and let soak 1 hour, drain. Bring about 2 c. of water to a boil. Add in greens and salt pork and return to a boil. Cover, reduce heat and simmer about 1 hour or possibly till greens are very tender. Add in salt to taste.
  2. Step 2: Combine cornmeal, egg and lowfat milk, mix well. Stir in shortening. Drop batter by tsp. on top of simmering greens. Cover and simmer for 20 min.
