%20I%20had%20been%20wanting%20to%20make%20this%20dish%20for%20a%20long%20time...lemon%20and%20rosemary%20have%20such%20a%20pleasant,%20fresh%20scent%20and%20taste%20that%20I%20thought%20the%20combination%20would%20be%20delicious.....and%20it%20was!%3C/p%3E%3Cp%3EAs%20we%20prepared%20the%20chicken,%20we%20decided%20to%20leave%20the%20skin%20on...normally%20we%20remove%20all%20of%20the%20skin%20when%20we%20are%20cooking%20chicken.%20After%20marinating%20in%20a%20mixture%20of%20olive%20oil,%20lemon%20juice,%20garlic%20and%20rosemary%20for%20about%20five%20hours,%20the%20chicken%20is%20cooked%20slowly%20over%20low%20heat,%20so%20the%20skin%20was%20certain%20to%20impart%20some%20additional%20great%20flavor.%20%20We%20weren't%20disappointed....to%20me%20the%20best%20part%20was%20the%20piquant%20taste%20of%20that%20first%20bite%20after%20squeezing%20the%20juice%20from%20the%20grilled%20lemon%20over%20the%20chicken...%3C/p%3E%3Cp%3ETuscan%20Lemon%20Chicken%3C/p%3E%3Cp%3Eadapted%20from%20Barefoot%20Contessa,%20Back%20to%20Basics%3C/p%3E%3Cp%3ETrim%20and%20chicken%20of%20excess%20skin%20and%20fat.%20%20Sprinkle%20both%20sides%20of%20the%20chicken%20with%20kosher%20salt%20(about%201%20tsp).%20%20Place%20the%20chicken%20in%20a%20gallon%20zip-lock%20bag.%3C/p%3E%3Cp%3ECombine%20the%20olive%20oil,%20lemon%20juice,%20lemon%20zest,%20garlic%20and%20rosemary%20along%20with%20some%20fresh%20ground%20pepper%20in%20a%20mixing%20bowl.%20%20Pour%20the%20marinade%20over%20the%20chicken%20in%20the%20bag.%20%20Seal%20the%20bag,%20removing%20any%20excess%20air.%20%20Rub%20the%20mixture%20so%20that%20all%20pieces%20of%20chicken%20are%20covered%20and%20place%20in%20a%20glass%20casserole%20dish.%20(This%20is%20just%20in%20case%20the%20bag%20isn't%20completely%20sealed.)%20%20Refrigerate%20the%20chicken%20overnight%20or%20for%20a%20minimum%20of%20four%20hours,%20turning%20the%20chicken%20over%20a%20few%20times.%3C/p%3E%3Cp%3EWhen%20ready%20to%20grill,%20turn%20the%20gas%20barbecue%20on%20low%20heat.%20%20(If%20using%20a%20charcoal%20fire,%20prepare%20the%20fire%20on%20one%20side%20of%20the%20grill.%20%20Spread%20about%20a%20quarter%20of%20the%20coals%20onto%20the%20other%20side%20of%20the%20grill.)%20%20Place%20the%20chicken%20on%20the%20cooler%20side%20of%20the%20grill,%20skin%20side%20up.%20%20Cook%20for%20about%2015%20minutes,%20until%20the%20underside%20of%20the%20chicken%20is%20golden%20brown.%20%20Turn%20the%20chicken%20and%20cook%20for%20another%2015%20minutes%20until%20golden%20brown%20and%20cooked%20through.%20%20Using%20a%20thermometer,%20check%20the%20temperature.%20%20Chicken%20is%20cooked%20when%20the%20internal%20temperature%20reaches%20165%C2%B0%20F.%3C/p%3E%3Cp%3EPlace%20the%20lemon%20halves%20on%20the%20cool%20side%20of%20the%20grill%20during%20the%20last%20ten%20minutes%20of%20cooking.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20to%20a%20cutting%20board%20and%20cover%20with%20foil.%20%20Allow%20the%20chicken%20to%20rest%20for%20five%20minutes.%3C/p%3E%3Cp%3ESprinkle%20with%20salt%20and%20serve%20with%20the%20lemon%20halves.%3C/p%3E%3Cp%3EI%20am%20sharing%20this%20delicious%20chicken%20at%20Full%20Plate%20Thursday%20hosted%20by%20Miz%20Helen's%20Country%20Cottage%20and%20the%20Four%20Seasons%20Blog%20Hop%20hosted%20by%20Turnips%202%20Tangerines!%3C/p%3E){kind=link}
