Receta Two Salmon Tartar

Ingredientes
- 21oz (600g) of fresh salmon
- 7oz (200g) of smoked salmon
- 1 minced shallot
- 1 tbsp minced flat parsley
- 1 tbsp minced dill plus 1 sprig for decoration
- 1 tbsp minced chives
- 1 lime
- 3 tbsps extra virgin olive oil
- 2 leaves fresh basil
- 2 large tomatoes
- 4 tsps soy sauce
- Pepper, salt
Direcciones
- Remove skin from salmon and cut into small cubes
- slices of smoked salmon into small pcs
- Put salmon pcs in a salad bowl
- Add in minced dill, parsley and minced chives
- Pour lime juice and extra virgin olive oil over ingredients
- Mix well
- Salt and pepper
- Cover salad bowl with plastic wrap and store in refrigerator for 1 hour
- Blanch (plunge tomatoes in boiling water for 1 minute then remove skin) tomatoes and cut into small cubes
- Chop basil leaves and combine tomatoes with a dribble of extra virgin olive oil
- Arrange salmon mix in the center of plates
- Cover salmon with tomato cubes and basil and arrange some around circles
- Pour 1 tsp of soy sauce on the plate around the composition
- Unmold
- Decorate with a tiny sprig of dill and a few crystals of cooking salt on the tomatoes
