%20were%20one%20of%20her%20favorites,%20but%20I'm%20not%20big%20on%20cooked%20spinach.%20%20These%20little%20darlings,%20though,%20make%20the%20heavens%20open%20so%20I%20can%20hear%20the%20angels%20sing.%3C/p%3E%3Cp%3E(Just%20for%20the%20record,%20I'm%20saddened%20to%20say%20that%20the%20angels%20don't%20sing%20Bryan%20Adams.%20%20But,%20it's%20beautiful%20none-the-less.)%3C/p%3E%3Cp%3EThis%20is%20a%20little%20more%20labor%20intensive%20than%20most%20of%20my%20recipes,%20but%20it%20is%20so%20worth%20it.%20%20These%20would%20be%20fantabulous%20little%20appetizers%20to%20impress%20even%20the%20most%20high-falootin'%20guests%20you%20may%20have.%20%20And%20your%20kids%20will%20love%20them%20too.%20%20It's%20a%20win/win...unless%20you%20wanted%20leftovers,%20then%20you%20might%20be%20outta%20luck.%3C/p%3E%3Cp%3EHere's%20the%20goods%20you%20need%20to%20gather:%3C/p%3E%3Cp%3E8%20ounces%20crumbled%20feta%20cheese,%208%20ounces%20cottage%20cheese,%203%20ounces%20cream%20cheese,%201-2%20sticks%20of%20butter%20(I%20TOLD%20you%20I'm%20sorry!),%203%20eggs,%20a%20handful%20of%20flat%20leaf%20parsley,%20a%20teaspoon%20of%20minced%20garlic,%20and%20a%20box%20of%20phyllo%20dough.%3C/p%3E%3Cp%3EIt's%20important%20that%20you%20let%20your%20dough%20thaw%20at%20room%20temperature%20for%202%20hours%20before%20assembling%20the%20pies.%20%20No,%20they%20do%20not%20thaw%20well%20in%20the%20freezer%20when%20you%20forget.%20%20*Ahem*%20Not%20that%20I%20would%20know%20that%20for%20any%20particular%20reason.%3C/p%3E%3Cp%3ETo%20make%20your%20filling%20you%20need%20to%20separate%20your%20eggs.%20%20I%20know%20there%20are%20all%20sorts%20of%20ways%20to%20do%20it...feel%20free%20to%20use%20your%20favorite%20technique.%20%20I%20prefer%20the%20lazy%20swap%20it%20back%20and%20forth%20between%20the%20shells%20method.%3C/p%3E%3Cp%3EPut%20the%20whites%20into%20your%20mixer%20bowl.%20%20You're%20going%20to%20beat%20the%20life%20out%20of%20these%20babies,%20so%20you'll%20want%20some%20horsepower%20behind%20that.%3C/p%3E%3Cp%3EBeat%20the%20egg%20whites%20until%20they%20are%20stiff%20and%20form%20a%20stand%20up%20peak%20when%20you%20remove%20the%20beater.%3C/p%3E%3Cp%3EMeanwhile,%20in%20another%20bowl,%20whip%20the%20egg%20yolks%20until%20they%20turn%20a%20creamy%20lemon%20color.%20%20I%20used%20a%20whisk.%20%20I'm%20tough%20like%20that.%20%20And%20I'll%20only%20whine%20about%20my%20sore%20arm%20a%20little%20tomorrow.%3C/p%3E%3Cp%3EWhen%20your%20yolks%20are%20whipped%20add%20the%20cheeses%20and%20incorporate%20well.%3C/p%3E%3Cp%3EThen%20add%20your%20parsley%20(chopped%20coarsely)%20and%20the%20teaspoon%20of%20garlic.%20%20Give%20it%20a%20good%20mix.%3C/p%3E%3Cp%3EFinally,%20gently%20fold%20in%20your%20egg%20whites.%20%20Now%20your%20filling%20is%20ready%20to%20go.%3C/p%3E%3Cp%3EThis%20will%20keep%20the%20dough%20you%20haven't%20used%20yet%20from%20drying%20out%20and%20getting%20crunchy.%20%20We%20don't%20want%20crunchy...yet.%20%20I'll%20admit,%20sometimes%20the%20thought%20of%20phyllo%20makes%20my%20palms%20a%20little%20sweaty,%20but%20I%20chalk%20that%20up%20to%20the%20time%20I%20set%20my%20oven%20on%20fire%20making%20baklava.%20%20(Which%20was%20no%20fault%20of%20the%20phyllo--it%20was%20complete%20user%20error.%20%20IF%20you%20ever%20make%20baklava...use%20a%20rimmed%20pan.%20%20Trust%20me.%20%20Honey%20and%20heating%20elements%20do%20not%20mix.)%20%20The%20moral:%20%20Don't%20fear%20the%20phyllo---it's%20really%20not%20that%20hard%20to%20use.%3C/p%3E%3Cp%3EIt%20will%20help%20a%20lot%20if%20you%20lay%20everything%20out%20ahead%20of%20time.%20%20You'll%20need%20a%20good%20space%20to%20lay%20out%20your%20dough,%20a%20bowl%20with%20the%20melted%20butter%20and%20a%20pastry%20brush,%20your%20filling,%20dough,%20and%20a%20parchment%20covered%20baking%20sheet.%3C/p%3E%3Cp%3ELay%20a%20sheet%20of%20the%20dough%20out%20on%20your%20workspace.%20%20Brush%20lightly%20with%20the%20melted%20butter.%3C/p%3E%3Cp%3ECut%20the%20dough%20lengthwise.%20%20You%20can%20cut%20it%20into%20two%20strips%20for%20bigger%20pies%20or%20three%20strips%20for%20appetizer%20sized%20bites.%3C/p%3E%3Cp%3EOn%20one%20end%20(towards%20the%20corner)%20place%20a%20tablespoonful%20or%20so%20of%20the%20filling.%20%20(Use%20a%20smaller%20amount%20for%20appetizer%20bites.)%3C/p%3E%3Cp%3EFold%20the%20bottom%20left%20corner%20up%20to%20meet%20the%20top%20edge.%3C/p%3E%3Cp%3ENow%20fold%20again%20using%20the%20inner%20edge%20as%20the%20fold%20line.%3C/p%3E%3Cp%3EKeep%20going%20until%20you%20get%20to%20the%20end.%20%20It's%20like%20the%20way%20you%20would%20properly%20fold%20a%20flag.%3C/p%3E%3Cp%3EGive%20it%20a%20good%20brush%20of%20the%20butter%20and%20place%20on%20your%20parchment%20lined%20sheet%20with%20the%20rest%20of%20it's%20tasty%20friends.%3C/p%3E%3Cp%3EBake%20it%20at%20325%20for%2020%20minutes.%20%20It%20will%20turn%20a%20lovely,%20scrumptious%20golden%20brown.%3C/p%3E%3Cp%3EServe%20these%20with%20some%20tzatziki%20dip%20for%20a%20great%20little%20appetizer,%20or%20heat%20one%20up%20fo I just finished making some lately...albeit a sweet version...yummy.
