....%20%20In%20fact,%20I%20would%20have%20to%20drive%20an%20hour%20into%20town%20to%20even%20purchase%20those%20Udi's%20muffins.%20%20But%20I%20live%20to%20serve%20so%20when%20our%20local%20tiny%20whole%20foods%20type%20store%20received%20in%20some%20of%20those%20muffins%20I%20squealed!%20%20LITERALLY!!!%20%20%20%20B~L~U~E~B~E~R~R~Y.......%20%20Everybody%20in%20the%20store%20turned%20around%20to%20look%20at%20me.%20%20I%20politely%20smiled%20right%20on%20through.%3C/p%3E%3Cp%3EUpon%20trying%20the%20first%20muffin,%20all%20that%20sugar%20that%20I%20don't%20usually%20eat%20went%20right%20to%20the%20delight%20center%20of%20my%20brain!%20%20So%20good!!%20%20LOL..%20%20So%20much%20sugar....%20%20:-D.%20%20%20I%20ate%20another%20one,%20hey%20its%20for%20the%20blog%20right?%20It's%20work!!!!%20I%20did%20a%20mini%20workout%20after%20to%20make%20up%20for%20it.%20%20You%20guys%20KNOW%20Im%20on%20that%20diet%20right?!?!?%20%20I%20literally%20gained%203%20pounds%20during%20this%20experiment%20so%20back%20to%20the%20old%20diet%20drawing%20board.%20See%20how%20much%20I%20love%20my%20small%20niche%20of%20readers?%20%20I%20gained%203%20pounds%20for%20you%20guys!!!%3C/p%3E%3Cp%3EThe%20Udi's%20Blueberry%20Muffin%20texture%20reminds%20me%20of%20their%20white%20bread.%20%20Same%20flour%20combination,%20proportions,%20measurements.%20%20That%20same%20mostly%20tapioca%20starch%20type%20of%20chew%20balanced%20with%20the%20right%20amount%20of%20brown%20rice%20flour.%20%20Not%20too%20much%20brown%20rice%20flour%20or%20it%20would%20get%20too%20dense.%20These%20muffins%20were%20not%20dense,%20but%20rather%20chewy%20and%20sort%20of%20light.%20%20No%20light%20like%20their%20bagels%20are,%20where%20you%20can%20imagine%20them%20floating%20off%20your%20counter.%3C/p%3E%3Cp%3EI%20dove%20right%20into%20the%20ingredient%20breakdown%20and%20trial%20baking.%20%20At%20the%20store,%20I%20picked%20up%20the%20large%20package%20of%20blueberries,%20something%20told%20me%20I%20was%20going%20to%20need%20it.%20%20Oh%20about%207%20way%20too%20crumbly%20muffin%20batches%20later%20(where%20the%20muffin%20literally%20sucked%20the%20moisture%20right%20out%20of%20your%20mouth)....%20I%20finally%20got%20it%20right.%20%20Moist,%20stays%20together%20without%20crumbling%20apart,%20just%20the%20right%20chewiness.%20%20Is%20finally%20right%20and%20I%20can%20share%20it%20with%20you.%3C/p%3E%3Cp%3EA%20few%20additional%20notes%20I%20wanted%20to%20mention.%20%20Udi's%20uses%20a%20bit%20of%20dried%20blueberries.%20%20A%20real%20true%20copycat%20would%20also%20use%20dried%20blueberries.%20%20I%20THOUGHT%20I%20had%20dried%20blueberries%20at%20home.%20%20Somebodies%20belly%20is%20now%20full%20of%20them%20instead.%20%20I%20got%20to%20thinking.%20%20Why%20the%20mixture%20of%20fresh%20and%20dried?%20%20Is%20it%20to%20help%20alleviate%20costs%20of%20the%20fresh%20blueberries?%20%20Is%20it%20to%20help%20ward%20off%20molding?%20%20These%20muffins%20won't%20last%20long%20enough%20to%20mold,%20TRUST%20ME!%20LOL.%20I%20am%20not%20using%20dried%20blueberries%20in%20my%20muffins%20because%20I%20did%20not%20have%20any.%20%20If%20you%20wish%20to%20do%20an%20exact%20copycat,%20go%20ahead%20and%20add%20a%20few%20tablespoons.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20Oven%20to%20425%20degrees.%3C/p%3E%3Cp%3EGrease%20Jumbo%20muffin%20tin%20well%20with%20butter.%3C/p%3E%3Cp%3EAlternatively%20line%20standard%20muffin%20tin%20with%20papers%20or%20greease%20muffin%20tin%20well.%3C/p%3E%3Cp%3EAdd%20moist%20ingredients%20into%20a%20medium%20sized%20mixing%20bowl.%20%20Mix%20until%20fully%20combined%20with%20a%20fork.%3C/p%3E%3Cp%3EAdd%20dry%20ingredients%20and%20continue%20to%20stir%20until%20lumps%20are%20dissolved%20and%20gum%20pulls%20the%20batter%20together%20nicely.%20%20Don't%20need%20to%20overdo%20it%20here%3C/p%3E%3Cp%3EAdd%20blueberries%20and%20stir%20gently.%3C/p%3E%3Cp%3EScoop%201/4%20heaping%20cup%20into%20a%20standard%20sized%20muffin%20tin.%20Muffins%20cups%20will%20only%20be%203/4's%20full.%20%20If%20you%20are%20using%20a%20mini%20muffin%20tin%20or%20a%20texas%20sized%20jump,%20same%20rule%20applies,%203/4's%20full.%3C/p%3E%3Cp%3EBake%20muffins%20at:%3C/p%3E%3Cp%3EJumbo%20at%20425%20for%20for%205%20minutes%20then%20350%20for%2025%20minutes.%3C/p%3E%3Cp%3EStandard%20at%20425%20for%20for%205%20minutes%20then%20350%20for%2018%20minutes.%3C/p%3E%3Cp%3EMini%20at%20350%20for%2012%20minutes.%3C/p%3E){kind=link}
