- Drain pears and save liquid.
- Measure boiling water with reserved juice to measure 3 qts, 3 cups total liquid. Add lemon juice and dissolve jello in hot liquid.
- Pour 1/2 jello into hotel pans (4-5 pans; place in walk in). Cool remaining jello at room temp.
- When hotel pans are semi-set, add pears.
- Meanwhile, with paddle in mixer, soften cream cheese to creamy smooth. Add cooled jello and ginger. Mix until smooth.
- Spoon whipped cream cheese and jello over "set" jello and smooth. Chill to set. Cover, date, and label.
