%20months%20has%20the%20more%20number%20of%20festivals%20in%20Hindu%20calendar.%20The%20festivals%20come%20one%20after%20the%20other.%20%20Its%20been%20only%20a%20week%20after%20the%2010%20day%20long%20festival%20of%20Onam%20and%20Avani%20avittam%20which%20was%20just%20the%20day%20after%20Onam.%20And%20y'day%20we%20celebrated%20the%20birth%20of%20Lord%20Krishna.%20Each%20festival%20has%20%20special%20kind%20of%20food%20associated%20with%20it.%20I%20made%20Uppu%20cheedai,%20Vella%20cheedai%20and%20Neiyappam.%20For%20neiyappam,%20I%20followed%20a%20different%20method%20of%20preparing%20the%20batter,%20which%20I%20shall%20blog%20later.%3C/p%3E%3Cp%3EUppu%20Cheedai%20(Savory%20deep%20fried%20rice%20balls)%3C/p%3E%3Cp%3EYou%20need%3C/p%3E%3Cp%3ERice%20flour%20-%203%20cups%3C/p%3E%3Cp%3ERoasted%20and%20powdered%20urad%20dal%20-%201/4%20cup%3C/p%3E%3Cp%3EGrated%20coconut%20-%201/2%20cup%3C/p%3E%3Cp%3ECumin%20and%20Pepper%20cons,%20crushed%20-%202%20tspn%3C/p%3E%3Cp%3ESalt%20to%20taste%3C/p%3E%3Cp%3EHing%20dissolved%20in%20water%3C/p%3E%3Cp%3EButter%20-%201%20tblspn%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EI%20always%20make%20fresh%20rice%20flour%20at%20home.%20Sieve%20the%20flour%20and%20then%20roast%20for%20few%20minutes%20till%20it%20is%20dry%20and%20should%20not%20change%20in%20color.%20Sieve%20again%20to%20remove%20the%20tiny%20lumps%20which%20forms%20on%20roasting.%20Take%20all%20the%20ingredients%20in%20a%20bowl%20and%20mix%20well.%20Add%20water%20little%20by%20little%20to%20get%20a%20pliable%20dough.%20Double%20sieving%20is%20done%20to%20avoid%20the%20bursting%20of%20cheedais.%20Make%20small%20balls%20out%20of%20the%20dough%20and%20leave%20it%20on%20a%20soft%20cotton%20cloth.%3C/p%3E%3Cp%3EThe%20cheedais%20should%20dry%20a%20bit%20before%20it%20is%20deep%20fried%20to%20get%20crisp%20ones.%20Make%20sure%20you%20put%20the%20cheedais%20crowded%20in%20the%20oil%20which%20will%20aid%20in%20getting%20it%20fried%20well.%20Let%20the%20cheedais%20rest%20for%20few%20minutes,%20after%20being%20drained,%20to%20turn%20crisp.%3C/p%3E%3Cp%3EVella%20cheedai%20(Sweet%20version%20of%20%20deep%20fried%20rice%20balls)%3C/p%3E%3Cp%3ESweet%20version%20of%20the%20cheedai.%20I%20love%20vella%20cheedai.%20But%20this%20is%20the%20first%20time%20I'm%20trying%20it%20at%20home.%20Every%20time%20I%20plan%20to%20try%20this%20for%20Krishna%20Jayanthi,%20but%20somehow%20could%20never%20do%20it.%20I%20always%20tell%20myself%20that%20I%20will%20try%20it%20some%20other%20time%20and%20it%20too%20did%20not%20happen.%20I%20hardly%20bother%20to%20make%20the%20festival%20specific%20dishes%20at%20some%20other%20time.%20Somehow%20they%20are%20always%20associated%20with%20the%20festivals%20and%20don't%20get%20done%20otherwise.%20Or%20it%20could%20be%20that,%20we%20have%20one%20festival%20after%20another%20coming%20up%20and%20we%20get%20busy%20to%20welcome%20the%20next%20and%20we%20leave%20behind%20the%20ones%20that%20passed%20by.%3C/p%3E%3Cp%3EMy%20amma's%20bhakashanam%20for%20the%20day%20is%20always%20murukku,%20cheedai%20and%20vella%20avil.%20My%20MIL%20makes%20%20thenkuzhal,%20uppu%20cheedai%20and%20neiyappam.%20This%20year,%20I%20skipped%20thenkuzhal%20and%20made%20vella%20cheedai.%20I%20followed%20the%20recipe%20I%20had%20taken%20down%20from%20amma.%20I%20was%20happy%20that%20it%20came%20out%20well.%20Crisp%20outside%20with%20a%20soft%20inside.%20It%20was%20very%20easy%20to%20bite%20into%20and%20did%20not%20turn%20out%20to%20be%20a%20test%20of%20the%20tooth%20strength.%3C/p%3E%3Cp%3EYou%20need%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3ERice%20flour%20is%20to%20be%20roasted%20till%20it%20turns%20light%20brown.%20Melt%20jaggery%20in%201%20cup%20of%20water.%20Let%20the%20syrup%20simmer%20for%20few%20minutes%20and%20add%20the%20grated%20coconut.%20Slowly%20stir%20in%20the%20rice%20flour.%20Switch%20of%20the%20heat.%20Add%20urad%20dal%20powder,%20cardamom%20powder%20and%20sesame%20seeds.%20Mix%20well.%20Leave%20it%20to%20cool.%20Mix%20the%20dough%20with%20your%20hands.%20Make%20marble%20sized%20balls.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20kadai.%20When%20it%20is%20hot,%20lower%20the%20heat%20and%20deep%20fry%20the%20balls%20till%20there%20are%20light%20brown.%20The%20cheedais%20crack%20a%20little%20and%20will%20not%20have%20a%20smooth%20surface%20like%20jamuns.%20It%20should%20be%20fried%20on%20low%20heat%20so%20that%20inside%20gets%20cooked%20well.%20In%20case%20the%20cheedai%20gets%20split%20while%20frying%20add%20little%20roasted%20rice%20flour%20and%20mix%20well.%20Quantity%20of%20jaggery%20might%20have%20been%20a%20bit%20more.%3C/p%3E){kind=link}
