Ingredientes

  • 1 pound veal, cubed
  • 1/4 c. shortening
  • 1/2 c. minced onion
  • 1 heaping teaspoon paprika
  • 1 med. carrot, diced
  • 1 teaspoon salt
  • 1 c. raw rice
  • 2-3 c. water
  • Minced parsley

Direcciones

  1. Rinse cubed veal and drain. Cook onion in fat till golden brown in color. Add in paprika and veal; mix to distribute the onion mix. Cover pan and simmer over a low flame for about 30 min. Meat will draw its own juices. Now add in water, carrot and salt. Cover and continue to cook till veal is almost done. Sprinkle raw rice over meat. Rice should be covered with liquid. Cover pan and let come to slightly boil, then lower heat and simmer till rice is cooked, stirring occasionally for about 20 min. When rice is cooked, sprinkle with parsley.
  2. It is important to simmer this dish at all times or possibly the liquid will evaporate too fast and the dish will be dry.
