.%3C/p%3E%3Cp%3EI%20really%20wanted%20to%20get%20into%20the%20groove%20of%20the%20back%20to%20school%20special,%20so%20I%20tracked%20down%20three%20recipes%20that%20I%20thought%20would%20be%20good%20candidates%20for%20veganizing%20and%20would%20be%20a%20good%20fit%20for%20my%20school%20theme.%20I%20experimented%20with%20the%20ingredients,%20and%20I%20brought%20the%20results%20to%20my%20sister%20Alison's%20and%20her%20fiance%20Dave's%20house%20over%20the%20weekend,%20where%20they%20graciously%20hosted%20my%20parents,%20Greg,%20and%20me%20for%20dinner%20on%20their%20awesome%20rooftop%20deck.%20I%20brought%20the%20test%20cookies%20out,%20the%20game%20faces%20went%20on,%20and%20the%20cookie%20tasting%20began.%20By%20munching's%20end,%20there%20was%20a%20clear%20winner%20of%20a%20recipe%20that%20needed%20no%20more%20tinkering,%20and%20that%20would%20be%20the%20recipe%20below.%3C/p%3E%3Cp%3EI%20originally%20got%20this%20recipe%20from%20my%20college%20roommate,%20Katie%20R,%20who%20has%20this%20amazing%20capacity%20to%20be%20sweet,%20supportive,%20and%20all%20around%20incredible,%20while%20also%20being%20able%20to%20tell%20me%20what%20I%20need%20to%20hear%20when%20times%20are%20good%20or%20tough%20(which%20means%20she%20can%20call%20me%20on%20my%20antics,%20but%20she%20does%20it%20in%20her%20sweet%20Katie%20way,%20so%20she%20can%20get%20away%20with%20it!).%3C/p%3E%3Cp%3EKatie%20gave%20me%20this%20recipe%20at%20my%20wedding%20shower.%20Her%20oatmeal%20raisin%20cookies%20continue%20to%20be%20well-loved%20by%20Greg,%20and%20this%20recipe%20is%20a%20great%20evolution%20of%20that%20tastiness.%20It%20mixes%20all%20kinds%20of%20good%20things%20in%20one%20spot%20that%20should%20always%20be%20together,%20including%20oatmeal,%20cranberries,%20and%20white%20chocolate%20-%20yum!%3C/p%3E%3Cp%3EI%20decided%20when%20I%20was%20going%20to%20veganize%20this%20recipe%20that%20the%20trick%20would%20be%20the%20eggs%20(although%20do%20see%20my%20note%20below%20about%20how%20to%20make%20these%20cookies%20totally%20vegan);%20I%20was%20torn%20whether%20I%20should%20use%20applesauce%20or%20bananas.%20In%20the%20end,%20I%20made%20two%20small%20batches%20for%20two%20big%20reasons.%20I%20had%20made%20cookies%20in%20the%20past%20with%20bananas%20and%20they%20turned%20out%20great,%20and%20I%20thought%20the%20banana%20accent%20would%20be%20great%20in%20the%20cookie.%20However,%20I%20thought%20the%20cookies%20would%20also%20benefit%20from%20the%20more%20subtle%20sweetness%20of%20the%20applesauce%20and%20be%20a%20hit%20with%20the%20anti-banana%20crowd.%3C/p%3E%3Cp%3EI%20am%20pleased%20to%20report%20that%20both%20versions%20are%20tasty!%20Everyone%20was%20pleasantly%20surprised%20that%20the%20final%20product%20was%20a%20soft,%20chewy%20cookie.%20Alison,%20Dave,%20and%20my%20dad%20were%20huge%20fans%20of%20the%20version%20with%20bananas%20and%20thought%20the%20banana%20backdrop%20gave%20the%20cookies%20a%20great%20zing,%20whereas%20my%20mom,%20who%20avoids%20all%20thing%20banana,%20really%20enjoyed%20the%20applesauce%20version.%20The%20good%20news%20is,%20when%20making%20this%20recipe,%20you%20can%20use%20the%20same%20basic%20basic%20and%20just%20decide%20whether%20you%20want%20to%20go%20the%20banana%20route%20or%20the%20applesauce%20route,%20so%20just%20follow%20your%20tastebuds!%3C/p%3E%3Cp%3EI%20also%20want%20to%20point%20out%20that%20the%20reason%20this%20recipe%20is%20not%20vegan%20is%20because%20of%20the%20white%20chocolate%20chunks.%20Try%20as%20I%20might,%20I%20was%20unable%20to%20track%20down%20white%20chocolate%20chips%20or%20chunks%20that%20did%20not%20have%20dairy%20in%20them.%20If%20anyone%20has%20a%20good%20suggestion%20for%20vegan%20white%20chocolate,%20please%20let%20me%20know!%20Otherwise,%20these%20cookies%20are%20easy%20to%20veganize.%20Either%20omit%20the%20white%20chocolate%20chunks%20completely%20or,%20if%20you%20feel%20like%20I%20do%20and%20taking%20chocolate%20out%20of%20anything%20is%20a%20travesty,%20substitute%20vegan%20semisweet%20chocolate%20chips%20like%20Ghirardelli,%20and%20you'll%20still%20have%20utter%20deliciousness.%3C/p%3E%3Cp%3ERECIPE%20UPDATE:%20I've%20learned%20that%20vegan%20white%20chocolate%20does,%20in%20fact,%20exist!%20Please%20seek%20those%20out%20so%20the%20final%20product%20is%20vegan.%20Otherwise,%20you%20can%20sub%20in%20the%20Ghirardelli%20semisweet%20chips.%3C/p%3E%3Cp%3EOatmeal%20Cranberry%20White%20Chocolate%20Cookies%3C/p%3E%3Cp%3EYields:%202-3%20dozen%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1)%20Cream%20together%20butter%20substitute%20and%20brown%20sugar.%20Add%20vanilla%20extract%20and%20banana%20OR%20applesauce%20until%20well%20mixed.%3C/p%3E%3Cp%3E2)%20Gradually%20add%20flour%20and%20baking%20soda%20and%20mixed%20until%20just%20combined.%3C/p%3E%3Cp%3E3)%20Stir%20in%20oats,%20cranberries,%20and%20chocolate.%3C/p%3E%3Cp%3E4)%20Drop%20by%20rounded%20tablespoonfuls%20onto%20cookie%20sheet%20lined%20with%20parchment%20paper.%3C/p%3E%3Cp%3E5)%20Bake%20in%20375%20degree%20oven%20for%2010-12%20m
